Browned Butter and Double Chocolate Chip Cookie Tray Bake - delicious, made in one bowl and very easy to make.

Cookie Bar Traybake cut into bars

    Cookie Tray Bake

What can be better then a cookie that you can slice into bars?

What I love about this recipe is that it combines two of my favourite things. I love a traybake. You get all the flavour with minimum fuss.  I also happen to love cookies. I would choose them over brownies any day. So this is a win win recipe in my book.

What can I use instead of Choc Chips?

You can really get creative here and use a whole array of ingredients instead of choc chips and nuts - crushed biscuits, caramels, pretzels, mini eggs, marshmallows, cereals, dried fruits, crisps, berries...whatever you like.

    Ingredients

    Unsalted Butter

    Dark Brown Sugar

    Caster Sugar

    Salt

    Vanilla Extract

    Eggs

    Baking Powder

    Chocolate Chips or chopped Chocolate

How to make Cookie Tray bake

    • Preheat the oven to 180°C/Gas Mark 4.
    • Grease or line a 9 x 13 baking tray.
    • Place butter in a medium pot over medium heat and allow to brown slightly. Stirring regularly. It will foam first and then brown. It should take 5–8 minutes. Pour into a large bowl and allow to cool.

      Browned butter in pot

    • Stir in the Sugar, salt and vanilla.
    • Add the eggs, beating well after each addition.

    • Stir in the baking powder and flour.
    • Add the chocolate chips or other additions of your choice.
    • Spread the batter into the tin.
