What can be better then chocolate chip cookies that you can slice into bars?
What I love about this recipe is that it combines two of my favourite things. 1. I love a tray bake. You get all the flavour with minimum fuss. No need to scoop, roll and bake batches of individual cookies. 2. I also happen to love cookies. I would choose them over brownies any day. So this is a win win recipe in my book!
In this wonderful recipe you make a browned butter cookie dough (browned butter makes every recipe better right?).
Then you bake it in a cake tin till golden brown. This is also an excelelnt recipe and easy dessert to take to a party or to family gatherings.
Ingredients List
You only need 9 ingredients in this delicious cookie bar recipe. Here is what you need to know about them:
Unsalted Butter - Salted Butter will also work. We brown the Butter in this recipe because it adds a rich, deliciously nutty flavour.
Dark Brown Sugar - This enhances the flavour of the already rich, nutty browned butter and makes the bars gooey and moist. You can use Light Brown Sugar too. Mainly Sugar is about texture and moisture.
Caster Sugar - This gives you lovely crisp edges. You can use other white sugar such as Granulated sugar too.
Vanilla Extract - I use a Vanilla Bean paste and I think it makes all the difference.
Dry ingredients - Flour - Plain Flour aka All Purpose Flour. We also add Baking Powder for just a little rise and a pinch of Salt to bring the flavours together.
Eggs - This just helps to bind the ingredients together.
Chocolate Chips or chopped Chocolate - I use a combination of Chocolate Chips - Dark, White and milk chocolate chips. Chopped Chocolate also works really well here.
How to make this Chocolate Chip Cookie Bar Recipe
This chewy cookie bars recipe is pretty straight forward. The full recipe with ingredient measurements can be found in the recipe card at the bottom of the page. I have also linked a video for ease.
1. Preheat the oven to 180°C/350 f/Gas Mark 4.
2. Grease and line a 9 x 13 baking tray with baking paper/parchment paper.
3. Place butter in a medium pot over medium heat and allow to brown. Stirring regularly. It will foam first and then brown. It should take 5–8 minutes. Pour into a large mixing bowl and allow to cool.
4. Stir in the Sugar, salt and vanilla and whisk on medium speed using an electric mixer until thickened and pale.
5. Add the Eggs, beating on low speed after each addition.
6. Stir in the baking powder and flour till just combined.
7. Add the chocolate chips or other additions of your choice. You can save some chocolate chips to scatter on top of the bars.
8. Transfer dough to the tin. You can bake it in a square tin instead for thicker bars and adjust the baking time.
Press down the top with a silicone/metal spatula.
9. Bake the bars for 25 to 32 minutes, until golden brown and the edges look done.
If you like them more done, you can bake them for a couple of extra minutes.
10. Allow to cool completely before cutting and serving. You can also serve them warm (let them cool for 30 minutes), with a scoop of ice cream.
Variations
Add Ins
You can really get creative here and use a whole array of ingredients instead of choc chips and nuts -
crushed biscuits, caramels, pretzels, mini eggs, marshmallows, cereals, dried fruits, sprinkles whatever you like.
Cocoa Powder
You can also replace some of the Flour with Cocoa Powder.
How to serve the best Chocolate Chip Bars ?
These cookie bars can be served as they are or warm with a scoop of vanilla ice cream.

The bars can be made up to 3 days. Store in an airtight container.
Storage/Freezer Instructions
Store these cookie bars in an airtight container for up to 4 days, or in the freezer for up to 1 month.
Thaw in the fridge or at room temperature before eating.

Ingredients
- 160 g Unsalted Butter
- 250 g Dark Brown Sugar
- 100 g Caster Sugar
- 1 flat tsp Salt
- 2 teaspoon Vanilla Extract
- 3 Eggs
- 2 ¼ teaspoon Baking Powder
- 325 g Plain Flour
- 400 g Mixed Chocolate Chips I used half dark and half white
Instructions
- Preheat the oven to 180°c/350°f. Grease and line an 9 x 13 inch baking tin with baking/parchement paper.
- Place the butter in a medium saucepan, and place over medium low heat. Cook until the butter has melted, and then continue to cook, swirling the pan often and stirring with a whisk, until the butter foams and turns golden brown and nutty - this should take 3-4 minutes.Leave to cool for 10 - 15 minutes.
- Add the brown sugar, caster sugar, salt and vanilla to the bowl with the brown butter, and mix to combine until thickened and pale in colour.
- Add the Eggs, beating for 1-2 minutes well after each addition.
- Stir in the baking powder and flour till just combined using a rubber spatula.
- Add the chocolate chips and stir in fully.
- Spread the batter into the tin. Note - You can bake it in a square tin instead for thicker bars and adjust the baking time. Press down the top with a silicone/metal spatula.
- Bake the bars for 25 to 32 minutes, until golden brown and the edges look done.
- Allow to cool completely before cutting into squares or bars and serving. You can also serve them warm (let them cool for 30 minutes), with a scoop of ice cream.

Hi Safira. This looks lovely! Would this work in a 12 x 8 tin? Am planning to try it in my (larger sized) airfryer.

Yes it will.
If you want to bake it, it will take slightly longer but in an air fryer it won't take as long. I would try it for 23 minutes and then just keep checking it every couple of minutes. x
