    Corn Ribs

    These Corn Ribs  are crisp,  full of flavour and ready to eat in under 20 minutes.

    Corn Ribs 

    These corn ribs are easy to make and so delicious. So much so that I had this plate all to myself.

    Ready in under 20 minutes and made with a few simple ingredients, these make the BEST side dish. Or simply have them as a afternoon snack!

    Flavoured with a few Spices and Oil, they are perfect for a quick bite to eat.

    I first saw these online 2 years ago and then not long after Ottolenghi shared his recipe.

    I knew I had to make them but I didn't get round to it until a couple of months ago.

    I'm not a Tiktok person but I believe that this recipe has also made the rounds there.

    The best thing about this recipe is that it can be made with any seasoning or spicing you like. You can also pair it with your favourite sauce!

     

    Why are they called Ribs?

    The name comes from the curved rib shape that happens when they are made in an air fryer.

     

    Ingredients in Corn Ribs

    Corn on the Cob

    Try to use them when in season - June to August in the UK.

    Spices

    Ground Cumin and Coriander

    Chilli Powder

    Smoked Paprika

    Garlic Granules

    Salt & pepper

    Oil

    Olive or any neutral flavoured oil such as Veg.

    Serve with

    Lime Juice

     

    How to make Corn Ribs

    The most challenging part of this recipe is cutting the corn. When I first tried it, I was surprised at how difficult it was. I have a little trick for that below:

    CHOP THE CORN

    You have 2 options here -

    You can stand the corn vertically on a chopping board with the wider side touching the board.

    Then cut down vertically with a sharp knife to cut the corn in half and then cut the halves into quarters.

    Or, you can microwave the Corn for a 8 - 9 minutes in a large bowl covered with baking paper before cutting. This makes it easier for the knife to go through. You will need to air fry at a lower temperature of 180 C.

    SEASON THE CORN

    Combine all the Spices in a bowl and mix together with a fork.

    Brush spices over the corn.

    How to Cook

    AIR FRY - My preferred way

    Place spiced Corn Ribs in a single layer in the air fryer basket.

    Make sure there is space between the ribs.

    Cook the corn in an Air Fryer at 190ºC for 10-15 minutes. You can flip them midway but I find that this is not necessary.

    OVEN ROAST

    Place spiced ribs on a oven tray that is lined with baking paper.

    Roast at 190ºC for 25-30 minutes. 

    The corn may not be as curly as the sir fryer version!

     

    SHALLOW FRY

    In order to do this, the corn should not be spiced first.

    Shallow fry in 1/2 inch of hot Oil until crispy.

    Mix the Spices in a bowl.

    Then brush over the Corn.

     

    Serve

    Serve with a wedge of Lime and Dips/Sauces of your choice.

     

    HOW TO STORE

    Corn Ribs are best eaten as soon as they are out of the Air Fryer. 

    In the unlikely event that you have leftovers, place them in an airtight container in the fridge for up to 2 days.

    Reheat in the Microwave or Air Fryer for 1 - 2 minutes until warmed through.

     

    Variations

    One of the best things about these Corn Ribs is that you can use any seasonings of your choice.

    You can use Seasonings such as Cajun, Jerk, Peri Peri.

    You can also Air Fry and then brush over a Flavoured Butter.

    You can serve them with any dips of your choosing such as Mayonnaise, Hot Sauce, Garlic Sauce.

     

    MY TOP TIP

    If you are finding it difficult to chop the Corn, I would suggest placing the Corn in the microwave first for a few minutes - 8 - 9. This will make it easier to cut. Then air fry at 180 C for 15 minutes.

    Ingredients

    • 2 Corn on Cobs Husks removed
    • 1 ½ tbsp Oil Olive or Veg, you can also use Butter (Around 2 - 3 tbsp)
    • 1 tsp Ground Cumin
    • ½ tsp Ground Coriander
    • ½ tsp Red Chilli Powder
    • ½ tsp Smoked Paprika
    • Salt and Pepper

    To Serve

    • Lime Wedges
