Easy Rotisserie Chicken Salad Recipe
This delightful chicken salad is made using store brought leftover rotisserie chicken.
It is delicious as it is or you can have it in a sandwich or wrap!
It is ideal for meal prep too.
The best bit?
It is ready to eat in under 10 minutes! Less if you buy a ready made salad or use a chopper to chop the veg!
Is Rotiserrie Chicken Salad healthy?
Yes it is. If you are calorie counting I would suggest sticking to the chicken breast meat only and skipping the mayo.
Is Rotisserie Chicken Salad Keto friendly?
Yes it is! There is no added sugar in the dressing so it is Keto friendly. You can remove the Pomegranate and Chilli Sauce if you like.
What is a Rotisserie Chicken?
Rotisserie Chicken is a chicken that is cooked on a horizontal or vertical rotisserie using direct heat next to the rotating chicken.
Electric/Gas powered heating elements may be used.
Cooking the chicken this was, usually means that you get really god crispy skin.
Leftover rotisserie chicken can be used in a variety of ways, such as in soup, in salad like we do here or in a sandwich.
Ingredients Needed For Rotisserie Chicken Salad Recipe
Rotisserie Chicken
Shredded or chopped. You can use a store brought one or make your own!
Salad
Again you can buy a store brought salad (150g - 200g) like I did here or you can use the following ingredients chopped - ½ Cucumber, 1 Tomato, ½ a large Iceberg Lettuce and ½ a Red Onion, a few leaves Parsley, 2 tablespoon Pomegranate and 2 tablespoon pickled Jalapeños. I also sometimes scatter over some pickled red onions.
I use both a store brought salad and add more salad ingredients on top. You can use just a store brought salad if you prefer.
Dressing
Mustard Paste, Lemon Juice, Salt, Black Pepper, Vinegar, Olive Oil, Mayonnaise, Plain Yoghurt, Chilli Sauce, Pinch Cayenne Pepper.
How to make a Rotisserie Chicken Salad
Carefully remove the chicken meat from the carcass. You can either shred or dice it.
Chop Salad vegetables and place in a bowl and add the Chicken on top.
Make the dressing by combining all the ingredients in a bowl and whisk together. Season.
Pour dressing over salad and toss to combine or mix everything together using large spoons.
Serve immediately or for best results, leave covered on the countertop or place covered in the fridge for at least 20 - 30 minutes before serving.
What Should You Serve With Rotisserie Chicken Salad
This Chicken salad goes well with many recipes. It is delicious served on its own but here are some other suggestions:
Serve as a sandwich filling on white or brown bread.
Serve in Brioche Buns.
Serve in wraps/tortillas.
Serve on top of crackers for a healthy snack.
Tossed through some Pasta for an easy Salad.
Server with Nacho Chips for a easy snack.
Tips & Tricks for Rotisserie Chicken Salad
- If you prefer not to use Mayonnaise, add more Yoghurt
- Use either Plain or Greek Yoghurt but give it a good whisk first.
- Add toasted Nuts like Almonds, Pine Nuts, Walnuts or Pecans for some texture and crunch.
- Add some toasted croutons because who doesn’t love a crunchy crouton?
Variations to Rotisserie Chicken Salad
The great thing about this and any salad recipe is that they are easily adaptable. Here are my top suggestions:
Salad
You can add your favourite salad ingredients - Corn, Avocado, Carrots, Beetroot, Radish, Spinach - whatever you like!
Add some dry Fruit
Raisins or Cranberries work well.
Add some fresh Fruit
Apples or Grapes work incredibly well in this recipe.
Adjust the flavours by adding herbs to the dressing
Such as Thyme, Oregano, Rosemary or an herb mix.
Add some texture with lightly toasted seeds or nuts
Pecans, Sesame Seeds, Sunflower Seeds, Walnuts, Pine Nuts. Pumpkin Seeds.
Add a hint of Spice
Cayenne Pepper, a touch of Cumin Powder, Smoked Paprika,Garlic.
Change up the Dairy
Use just Yoghurt instead for a lighter salad.
Resting Time
Give the salad some time to rest and for the flavours to mingle for at least 20 - 30 minutes for the best flavour!
Chicken must be cold!
Make sure the chicken is cold before adding it to the salad so you don’t end up with sign wilted greens.
Use whatever leftover roast chicken you have!
Any leftover roast or baked chicken will work for this recipe. You don’t have to use a rotisserie chicken.
Use the entire Chicken for the best flavour
Use every part of the chicken for best flavour. Thighs and Legs lend the best flavour.
Cut into sizeable chunks or strips.
Slice or shred but don’t over do it! You want to be able to detect the chicken in the salad.

How many calories are in a rotisserie chicken salad?
Nutritional information can be found below in the recipe card. You can use Chicken Breast only if you want to take the calorie count down. You can also replace the Mayonnaise with Yoghurt and skip the Chilli Sauce.
How long does Rotisserie chicken salad last for?
It will last for 3 - 5 days in a airtight container or tightly covered bowl.
You can eat it the next day and up to the 5th day. Beyond that, it should be discarded.
Can you freeze Rotisserie Chicken Salad?
I would not recommend freezing any chicken salad. The Dairy will separate do I would not recommend it!
