    Easy Soft Boiled Eggs and Avocado Toast

    Listen, I know..this barely requires a recipe but there is a method to my madness. Firstly I LOVE easy soft boiled eggs and avocado toast for breakfast. Secondly, I am updating an old Ramadan Sehri recipe ideas post and this is one of the options in it.

    Breakfast or brunch is my favourite meal of the day. I never skip it. I truly believe it’s the most important meal of the day to help you feel energised and ready to tackle the day ahead. If you have been following me a while, you may already be aware that I am obsessed with eggs too. 

    Avocado and soft boiled eggs on toast

    This is the trend that just won't die and eating it outside of the house is expensive ad whilst I don't mind that occasionally, it’s so easy to recreate at home if you are craving it.

    What I love about this recipe is that it doesn't feel like it should be healthy. Yet it is a healthy protein-packed breakfast. It also happens to be really quick to make and a recipe that works well for Breakfast, Lunch, Brunch, Dinner or even as a Snack.  I love that it’s a well rounded meal made with carbs, protein  and healthy fats.

    How to make the best avocado toast with egg

    1. Pick ripe avocados: There is nothing worse then unripe avocados. Such a disappointment. So try to find an avocado that’s ripe.  You’ll know it’s ripe if you gently squeeze the avocado with the palm of your hands and it gives a little. Don’t use your fingertips because that might bruise it. Our corner shop always complains about people who come in and poke the avocados to death.

    If it still feels firm, it may need a day or two. If it gives too easily, leave it on the shelf. It's not your problem. Back away. If you have already brought it and forgot to check it in store, you can also pull out the stem on top of the avocado. If it’s green underneath, it’s ready to go. If it’s hard to remove, it’s not ripe yet. And if it’s brown underneath, it’s overripe.

    2. Use thick-sliced bread and toast it: The second part of avocado toast is the toast, of course. For me, it is Sourdough because it works well as a strong base but is great for mopping up leftover egg yolk too.

    3. Mash the avocado: Yes you can slice it but mashing it makes for a really creamy base for that egg yolk to dribble over. For extra flavor on the mashed avocado, you can add plenty of lime juice with chilli flakes, salt and pepper. You can also add fresh herbs like coriander. Or make a thicker version of this.

    4. Cook the Eggs: You can add half boiled eggs, fried eggs, scrambled eggs or poached eggs on top of the avocado toast.I love poached or half boiled.

    In fact this is probably what I will have for breakfast today. I have had a stressful couple of days of even more website woes. My website was hacked over the weekend and my heart was literally in my stomach. I only found out because an amazing reader contacted me for a specific recipe that had mysteriously disappeared.

    How to make the eggs

    Anyway moving on..

    Half Boiled Eggs remind me of my grandma who recently passed away. She was actually my grand fathers sister but we were close because she was the only grandparent we had in this country. Needless to say, we were absolutely heart broken.

    When we were at their house after school, she would come and ask us what type of egg we wanted. I would always get mixed up and order the wrong type and be disappointed that I wasn't having a half boiled egg!

    Soft boiled eggs are so delicious. The whites of the eggs are firm, but inside is a golden silky yolk.

    Instead of actually boiling my soft boiled eggs in loads of water, I steam them. To create the steam you only need one inch of water in the pot, a lid and a little time. I use large eggs and they take six minutes to steam to half boiled perfection.

    So what you do is:

    • Add 1 inch of water to a pot, cover, and bring to a boil over high heat.
    • Once boiling, add an egg into the pot. Replace the lid and let it continue to boil for exactly six minutes.
    • After six minutes, remove the egg from the pot and run under cool water until cool enough to handle. Peel, and add to your toast.

    Avocado Nutrition

    Avocados are a great source of vitamins C, E, K and B6 as well as being rich in folate, magnesium and potassium. They do contain fats, but they are healthy fats that are great to include in your diet.

    Will this breakfast keep me full till lunch?

    Because this breakfast is high in protein and fiber, it will keep you feeling fuller for longer. So you won't feel the need to snack in between.

    Easy Soft Boiled Eggs and Avocado Toast

    Ingredients

    • 1 Egg
    • 1/2 large Avocado
    • 1 small Lime
    • Flaky Salt and course Black Pepper
    • Pinch Red Chilli Flakes
    • 1 or 2 slices Sourdough Or bread of your choice

    Instructions

    Eggs

    1. Add 1 inch of water to a pot, cover, and bring to a boil over high heat.

    2. Once boiling, add an egg or as many as you are making into the pot.

    3. Close the lid and let it continue to boil for exactly six minutes. After six minutes, remove the egg from the pot and run under cool water until cool enough to handle. Peel, and add to your toast.

    4. Whilst the eggs are steaming, peel and de stone the avocado.

    Avocado

    1. Mash the avocado using a fork. Then squeeze in the lime and add seasoning and chilli flakes. Mix thoroughly.

    Toast

    1. Toast your bread.

    2. Remove from the toaster/grill and top with the mashed avocado and half boiled egg. Add more seasoning if you like.

    Recipe Notes

    Variations -

    • Sprinkle over some Zataar at the end.
    • You can mash some feta into the avocado.
    • You could also blend some coriander and green chillies and add it to the avocado.
    • You can of course have your eggs scrambled, poached or fried instead.
    • Drizzle over some hot sauce.
