    Indian Spiced Chicken Salad

    Hey hey hey! Today I am sharing with you my delicious indian spiced chicken salad. It is one I have often because it is simple and easy to make. Perfect spiced chicken marinated in indian spices with a cooling refreshing dressing and crunchy salad. This is about to become your favourite chicken salad.

    We love to eat indian spiced chicken salads because er..we are indian. I remember when I was younger, I would batch make the chicken and salads for the week and take it to work. Then my co workers would be like, 'yo what dat..gimme some' and I would bet like 'ere, no..make your own love..' Hahaha. Just kidding. That convo went differently.  Anyway this is obviously a light recipe, that is easy to make and super delicious. 

    The first time I served this indian spiced chicken salad, it was very well received by my nearest and dearest. It is also great to make with rotisserie chicken too. 

    For this recipe, I cooked the marinated chicken on the hob. However,you can also grill it if you want a more charred flavour. If you do that, I would strongly recommend adding some chickpea flour to the marinade. Just trust me.

    When I grill the chicken, I always skew the chicken onto pre soaked wooden skewers or metal skewers. I don't know why I love eating that way and the kids always think it is a little bit special too.

    The chicken can be marinated a day in advance so that it develops flavour from all those delicious spices but you can also prepare it not he day. Whatever works for you.

    This is precisely the kind of easy, filling and delicious recipe that makes me glow inside when I haven't got time to cook a big meal. Like today for example. It is pretty much hands off and you are still getting a flavourful, healthy meal.

    Indian Spiced Chicken Salad

    Indian Spiced Chicken Salad - Simple and yummy indian chicken salad!

    Course Lunch
    Prep Time 5 minutes
    Cook Time 10 minutes
    Total Time 15 minutes

    Ingredients

    Chicken

    • 300 grams Chicken Breast Skinless and cut into slices
    • 1 tbsp Oil Extra Virgin Olive
    • 3 cloves Garlic crushed
    • 1 tsp Cumin Powder
    • 1/4 tsp Garam Masala Powder
    • 1/2 tsp Red Chilli Powder
    • 1 Lemon Juice of
    • Salt and Pepper

    Salad

    • Small Handful Cherry Tomatoes Cut in half
    • 1/2 Avocado Sliced
    • 1/4 Red Onion Sliced finely
    • Handful Lettuce Chopped
    • 2 tbsp Peanuts Roughly Chopped
    • 2 Eggs Boiled and Chopped into long quarters

    Dressing

    • 2 tbsp Lemon Juice
    • 2 tbsp Olive Oil
    • 1 tsp Ground Cumin
    • Salt to taste

    Instructions

    1. Marinate the chicken breast in oil, garlic, cumin, garam masala, red chilli powder, lemon juice and salt and pepper. Set aside for 1 hour or overnight.

    2. Heat a pan over high heat and add the chicken, loosely cover with a lid and cook for 5 minutes on each side or until done. 

    3. Combine all the salad ingredients in a large bowl. 

    4. When the chicken is done, slice into strips and serve with the salad.

    Adjust garlic quantity if needed!

    The total time does not include marinading time!
