Mediterranean Chicken Tray Bake with Potatoes, Olives, Pepper and Feta

Mediterranean Chicken Tray Bake with Potatoes, Olives, Pepper and Feta - This Easy Mediterranean Chicken Tray Bake Recipe is the perfect midweek meal for busy families. In this recipe juicy Chicken Thighs are baked with tomatoes, peppers, potatoes and red onions with Herbs, Spices and some Chicken Stock. Then Feta and Olives are added, before the tray is popped back into the oven till the Feta is all melty and gooey. This is a recipe that requires minimal effort but it has lots of flavour and it's also a complete meal!

The countries surrounding the Mediterranean are many! Some of which are Spain, France, Italy, Croatia, Albania, Greece, Turkey, Syria, Lebanon, Egypt, Libya, Tunisia, Algeria, Morocco.

We use flavours from the Mediterranean to flavour this Juicy Chicken Tray Bake Recipe.

Ingredient Notes

Chicken Thighs 

Skin on, bone in large succulent Chicken thighs and drumsticks are cooked till golden with crispy skin and juicy flesh.

Lemon

Juice as well as Lemon wedges are added to the tin. You can also add Lemon Zest. This adds plenty of citrus zesty flavour. 

Garlic Cloves

In their skins. If you remove the skins, the Garlic will burn.

Oregano

I use dry Herbs. You can use Thyme or Parsley too. If you have a Herb Garden, take your pick!

Most fresh herbs such as Oregano, Rosemary and Thyme work. Fresh Basil or Fresh Parsley would need to be added after cooing.

Spices

Smoked Paprika, Cinnamon, Cumin, Salt and Black Pepper make this Chicken traybake delicious and full of Mediterranean flavour.

Olive Oil

A full flavoured light Olive Oil.

Potatoes

Halved Baby Potatoes/New Potatoes.

Chicken Stock

We add this to the tin to add flavour.

Red Onion

Cut into wedges.

Bell Peppers

Sweet Red and Yellow Peppers.

Cherry Tomatoes or small Vine Tomatoes

These add sweetness. You can also use Baby Plum Tomatoes.

Olives

Black Olives/Kalamata Olives or Green Olives or even mixed Olives will work.

Feta Cheese

As the saying goes, Feta makes everything better. In this recipe it is baked till it becomes slightly gooey in the middle. It adds a lovely salty tang to this recipe.

How to make it

To make my Mediterranean chicken tray bake, first preheat your oven to 200c conventional, gas mark 6 or 400F.

Combine Thighs, Lemon Juice, Oregano, Smoked Paprika, Cinnamon, Cumin, Olive Oil, Salt and Pepper in a large bowl and mix together (or add straight to the tin like I do).

Add Chicken to a large roasting tin or baking dish with Red Onions, Peppers, Cherry Tomatoes, Potatoes, Garlic and Chicken Stock.

Place in the oven and cook for 45 mins.

Add Feta and Olives and cook for a further 30-40 minutes or until cooked.

Spices added to Chicken

Salt and Pepper added to Chicken

Tomatoes and Peppers added to tin

Vegetables added to tin

Olives and Feta added to tin

Serving Suggestions

Rice - Serve with Rice. Good options are Basmati Rice or Peri Rice. You can also serve it with Cauliflower Rice or other grains such as Freekah, Bulgur Wheat etc.

Pasta - This recipe is delicious serves alongside Pasta. Try it with Pesto Pasta.

Salad - serve with a leafy green salad or Tabbouleh.

Cooked vegetables - serve with roast Veggies such as Roast Vegetables with Feta and Pine Nuts.

Bread - Serve with crusty Bread so you can mop up all those delicious juices.

Substitutions and Variations for Mediterranean Chicken traybake

This is a versatile recipe. Here is what you can do to change things up or possible variations:

  • Chicken Thighs - Use Chicken Drumsticks or a whole skin on Chicken. 
  • Vegetables - Use other Vegetables such as Courgettes (Zucchini), Pumpkin, Butternut Squash or Fennel. 
  • Feta - Use Halloumi instead.
  • Pulses - Add Chickpeas to the tin to make it more hearty.
  • Make it Spicy - Add Chilli flakes or Red Chilli Powder to the marinade.

Tips and Tricks 

In this recipe, marinating is optional. It is definitely more flavoursome if you can marinate overnight.

Storage

Storing - Fridge

Mediterranean Chicken is best eaten fresh but it can be stored in an airtight container in the fridge for up to 3 days.

Freezing 

Let the Chicken cool down completely and then store in a freezer-safe container for up to 3 months.

Reheating 

Defrost in the fridge overnight and microwave till hot all the way through. Or pop into the oven and cooked till warmed through.

Ingredients
  

Chicken Marinade

  • 1 Kg Chicken Thighs Skin on
  • 1 Lemon Juice only
  • 6 cloves Garlic in Skins
  • 1 tablespoon Dried Oregano
  • 1 tablespoon Smoked Paprika
  • 1 tablespoon Cumin Powder
  • 1 teaspoon Cinnamon Powder
  • 3 tablespoon Olive Oil
  • Salt and Pepper

Other

  • 4 tbsp Chicken Stock

Veg

  • 1 lb Baby Potatoes Cut in half
  • 1 large Red Pepper Cut into thick strips (or Yellow Pepper)
  • 1 Red Onion Cut into wedges
  • Handful Cherry Tomatoes
  • 1 Lemon cut int wedges

Feta and Olives

  • 200 grams Feta Cut into large cubes
  • 60 grams Olives

Instructions
 

  • Combine all the ingredients for the Chicken Marinade in a large bowl. Optional - Marinade for 30 minutes to overnight.
  • Preheat oven to gas Mark 6/200 C.
  • Add Chicken to a large roasting tin or baking dish with Red Onions, Peppers, Cherry Tomatoes, Potatoes, Garlic and Chicken Stock.
  • Place tin in oven and bake covered with foil for 55 minutes.
  • Remove tray from the oven and add the Feta and Olives. Bake for a further 20 - 25 minutes.
