Mediterranean Chicken Tray Bake
This is the perfect meal served with bread or with Rice or quinoa.
There is minimal effort required here but so much FLAVOUR and if you don't have time to marinade, you don't have to!
All the flavours together make for the most incredible meal! The Potatoes soak up all that flavour and the Chicken is super moist.

Marinade if you want -this delicious Mediterranean inspired Chicken is juicy and delicious. Marinading helps but is not necessary.
Ingredients in Mediterranean Chicken Tray Bake
Chicken Breast or if you prefer make it with thighs and drumsticks (see instructions below)
Oil, Lemons, Garlic, Paprika, Vinegar, Oregano, Thyme, Red Pepper Flakes, Salt and Pepper
Honey and Mustard
Potatoes, Red Onions and Red Peppers
Feta and Olive (Optional)
How to make it
In a nutshell:
Marinade the Chicken in the marinade ingredients (Optional).
Bake the Veg for 20 minutes and then add the Chicken, Feta and Olives.
Bake for a further 15 minutes.
Variations
Add Courgettes, Pumpkin, Sweet Potato, Corn to the Tray.
Use different Spices or even a blend.
How to make this Recipe with Chicken Thighs/Legs
Marinade the Chicken (Skin on or off) in all the mariande ingredients in a bowl. Set aside for 45 minutes.
Preheat oven to 180C/Gas Mark 4.
Place Veg in Oven Tray and season, top with Chicken.
Bake for 45 minutes, then remove from oven and add Olives and Feta.
Bake for a further 15 minutes.

Ingredients
Chicken Marinade
- 2 lb Chicken Breast Cut into 1 inch slices
- 3 tbsp Olive Oil
- 3 tbsp Red Wine Vinegar
- 1 tbsp Honey
- 1 tbsp Mustard
- 1 Lemon Juice Of
- 6 cloves Garlic crushed
- 1 tbsp Fresh Oregano chopped finely
- 1 tbsp Fresh Thyme chopped finely
- 1 tbsp Smoked Paprika
- 1/2 tbsp Red Pepper Flakes
- Salt and Pepper
Veg
- 1 lb Potatoes Cut into small cubes
- 1 large Red Pepper Cut into thick strips
- 1 Red Onion Cut into slices
- Salt and Pepper
Feta and Olives
- 200 grams Feta Cut into large cubes
- 60 grams Olives
Instructions

Combine all the ingredients for the chicken marinade in a large bowl and put into the fridge for 45 minutes.

Preheat oven to gas Mark 6/200 C and line a tray with foil.

Add the veg to the tray and season. Bake for 15 - 25 minutes.

Remove tray from the oven and add the feta and olives. Add the chicken to the same tray with any excess marinade. Bake for a further 20 minutes.
