The BEST Dynamite Chicken - In this recipe fried crispy chicken chunks are coated in a sweet, spicy mayonnaise dressing (bang bang sauce). This starter/appetizer is famous for a reason. This is a popular restaurant dish that is served all over the world and is easy to make. This recipe is inspired by the well known PF Chang appetiser - Dynamite Shrimp.
Soak chicken in buttermilk and remaining marinade ingredients (salt and pepper, garlic granules, comes paprika soy sauce), for 20 minutes to 1 hour. (Optional Step).
Heat Oil in a deep pot/wok.
Whisk Eggs together in a bowl.
In a separate bowl, whisk ingredients for the batter.
Add Chicken to the Egg bowl, then add to Flour and coat evenly.
Check that the oil is hot, then deep fry Chicken pieces in batches a few at a time for 6 - 10 minutes until golden brown.
Transfer fried chicken pieces to a wire rack placed over a tray/sheet pan lined with tissue paper. Or drain on kitchen paper.
Meanwhile make the spicy Mayo sauce by adding Mayo, Sriracha, Honey, Hot Sauce, Lemon Juice and Smoked Paprika and whisking together.
Toss the chicken with the sauce until evenly coated and serve with a salad.
