    The BEST Dynamite Chicken - In this recipe fried crispy chicken chunks are coated in a sweet, spicy mayonnaise dressing (bang bang sauce). This starter/appetizer is famous for a reason. This is a popular restaurant dish that is served all over the world and is easy to make. This recipe is inspired by the well known PF Chang appetiser - Dynamite Shrimp.

    The BEST Dynamite Chicken

    In this trusty dinner recipe, crispy fried chicken is drenched in a sweet, spicy and savoury bang bang mayo sauce.

    This is a recipe that is one of the weekend projects I like to do with the kids. We all have a section each and once the work is done, we can sit together and enjoy the food!

    The recipe itself  is a popular starter made up of battered chicken dressed in a sriracha mayo sauce.

    The shrimp version of this dish made famous by PF Chang, is well known and loved by all (even picky kids) but the chicken version is just as good! 

    Ingredients and Substitutions for Dynamite Chicken

    Chicken Breast - Cut into 1/2 inch strips or into bite-sized chicken chunks. You can also use boneless, skinless thigh pieces cut into chunks.

    Buttermilk - To soak the meat in. This tenderises the chicken but it can be left out.

    Salt and Pepper

    Garlic Powder, or Garlic Paste, Paprika Powder and Soy Sauce -  These form part of the marinade and add flavour to the Chicken.

    Eggs - To help the flour adhere to the chicken.

    Plain Flour, Corn Flour, Salt and Black Pepper Powder -  for super crispy Chicken.

    Mayonnaise - For a creamy dressing.

    Sriracha Sauce - Or any hot sauce.

    Honey - Adds sweetness but it can be replaced with sugar if you prefer. 

    Lemon Juice - Adds a citrusy tangy flavour to the sauce.

    Hot Sauce - This is the perfect sauce to add a spicy kick.

    Vegetable Oil - Or any oil with a high smoke point for deep frying.

    Toppings - You can add toppings such as Spring Onions, Chives and Sesame Seeds.

    Salad - Salad, Lettuce or any other greens to serve.

    How to make Dynamite Chicken

    Soak chicken in buttermilk and remaining marinade ingredients for 20 minutes to 1 hour. (Optional Step).

    Whisk Eggs together in a bowl.

    In a separate bowl, whisk ingredients for the batter - Plain Flour, Corn Flour, Salt and Pepper.

    Add Chicken to the Egg bowl, then add to Flour and coat evenly.

    Deep fry Chicken pieces a few at a time for 6 - 10 minutes until golden brown.

    Transfer fried chicken pieces to a wire rack placed over a tray/sheet pan lined with tissue paper. Or drain on kitchen paper.

    Meanwhile make the spicy Mayo sauce by adding Mayo, Sriracha, Honey, Hot Sauce, Lemon Juice and Smoked Paprika and whisking together.

    Toss the chicken with the sauce until evenly coated and serve with a salad.

    what is the difference between dynamite chicken and bang bang chicken?

    Dynamite chicken is usually a little spicier and bang bang chicken is more mild. 

    how to make dynamite chicken sauce

    The sauce is as simple as just whisking the ingredients together in a bowl. The ingredients are mayonnaise, sweet chilli sauce, siracha and honey. 

    Some people add Ketchup but if you know me, you know I hate ketchup so that wasn’t going to happen.

    Dynamite Shrimp is a recipe that was created and popularised by PF Chang (an American casual dining Asian fusion restaurant chain). This is the Chicken version of that.

    After the chicken is coated in the batter, place in the Air Fryer basket.

    Air fry for 6 - 7 minutes at 190 °C and then coat with the dynamite sauce.

    is dynamite chicken healthy?

    The chicken is usually deep fried and the sauce is a mayonnaise based sauce so I wouldn’t say so. You can make it healthier by air frying the chicken and using a lighter mayonnaise.

    Make Ahead Instructions

    You can prep the recipe a few hours ahead by making all the various elements ahead of time and storing in air tight containers. 

    Then simply, dredge the marinaded chicken in the flour, fry and top with the sauce.

    You can reheat in the microwave but it won’t be as crispy. You can also reheat in the air fryer and make more sauce. 

    can you freeze dynamite chicken?

    I would not recommend freezing Dynamite Chicken.

    Frying - Do no overcrowd the oil when frying the chicken and fry over a medium flame so it doesn't get too hot. This lowers the temperature of the oil resulting in soggy batter

    Leftover Dressing - Any leftover sauce can be used as a dressing for salads.

    Buttermilk Chicken - This is an optional Chicken trick which tenderises the Chicken.

    Ketchup - I do not like Ketchup but you can add a tbsp to the dressing if you like.

    Use rubber tongs - When lifting the chicken out of the pan to avoid the the batter coming away from the meat.

    Make Ahead - The bang bang sauce can be made ahead and it keeps well in the fridge for 3 days. Just mix it well before serving.

    ​Variations

    • You can make this recipe with Chicken Nuggets or store brought/takeaway chicken strips.
    • You can add a pinch of red chili powder into the mayo for some extra heat.
    • Serve with Spicy Pickles. 
    • You can add some Pickle water in the Buttermilk which adds loads of flavour.

    As well as serving alongside a leafy salad, Dynamite Chicken can be served with a number of Noodle or Rice Recipes such as:

    Ingredients

    • 500 g Chicken Breast Cut into 1/2 inch strips

    Marinade

    • 125 g Buttermilk
    • Pinch Salt and Pepper
    • 1 tsp Garlic Granules
    • 1 tsp Smoked Paprika
    • 1 tbsp Soy Sauce

    Other

    • 500 ml Vegetable Oil For frying

    Batter

    • 85 g Cornflour
    • 85 g Plain Flour
    • ½ tsp Salt
    • ½ tsp Pepper

    Eggs

    • 100 g Mayonnaise
    • 2 tbsp Sriracha
    • 1 tbsp Honey
    • 2 tbsp Hot Sauce
    • 1 tsp Lemon Juice
    • 1 tsp Smoked Paprika

    Instructions

    6. Check that the oil is hot, then deep fry Chicken pieces in batches a few at a time for 6 - 10 minutes until golden brown.
