    2 Minute Microwave Cookie Dough

    2 Minute Microwave Cookie Dough - This cookie dough recipe is melty in the middle and slightly crispy on the edges.

    It is the perfect recipe for a midnight or even mid afternoon craving. This recipe is based on my Pizza Hut Cookie Dough recipe.

    The best bit? It’s ready to eat in 2 minutes. Serve with a scoop of ice cream and enjoy.

    What I love about Microwave Cookie Dough

    • There isn’t much work or equipment required.
    • It is super quick to make.
    • It is delicious topped with ice cream.

    Ingredients

    Before we dive in let’s talk about what you need to make this recipe:

    Butter - I use Salted Butter in this recipe but Unsalted also works. Just add a good pinch of Salt.

    Caster or Granulated Sugar with Light Brown Sugar - For crispy edges and a soft center, I use 1/2 of each.

    Plain Flour - You can use Self Raising if that is all you have.

    Vanilla & Egg - 1 Egg is needed just to bring everything together.

    Salt - A pinch elevates the flavour of the Cookie Dough.

    Chocolate Chips - chopped up Chocolate also work as long as the other ingredients are at room temperature and not hot.

    How to make Microwave Cookie Dough

    This recipe is very easy to make, but here are some pics to help with the step by step process:

    Add the butter to a bowl.

    The butter should be at room temperature or melted but fully cool.

    Cream together the butter and sugars until the mixture is light.

    You can do this in a stand mixer or in a large bowl with a wooden spoon or hand held mixer.

    Next, add the vanilla & egg and beat again until the mixture comes together.

    Add Plain Flour and Salt and fold in gently.

    Add chocolate chips and stir by hand until the chocolate chips are evenly distributed throughout the batter or sprinkle on top.

    2 Minute Microwave Cookie Dough

    Spread into a microwave safe dish. Roughly 16cm across.

    I recommend using a very lightly greased spatula or spoon but you can just spread with a wooden spoon if you prefer.

    Microwave for 60 - 100 seconds and enjoy! (Mine is 800 Watt - adjust timings according to yours).

    Let the cookie cool for 5 minutes before you serve it! Dollop on some Ice Cream and dig in.

    FAQ's

    Can It be made in the oven instead?

    Yes this is the oven version of the recipe.

    You will need to bake it for less time (depending on the width of the tin) as the recipe here has half the ingredients.

    Can I make it ahead of time?

    This is best served immediately. See notes below on leftovers and storage.

    How to eat it

    This is a dessert best enjoyed right away with a scoop of vanilla ice cream but if you have leftovers you can store in an airtight container and microwave to enjoy another night.

    Or you can save some of the cookie dough to make fresh another night.

    You can make the batter before hand and keep it in the fridge for up to 48 hours.

    Storage/Freezing

    Let the cookie dough cool completely and store it in an airtight container in the fridge for 3-5 days.

    It also keeps in the freezer for up to two months.

    If freezing for a while, I would wrap the cookie dough in plastic wrap before placing in an airtight box.

    Tips for Microwave Cookie Dough

    Instead of the choc chips, add 1 heaped teaspoon of chocolate spread for a Nutella version.

    Don’t be tempted to overmix the cookie ingredients. You need to mix just enough to combine.

    Don’t be tempered to microwave for too long! My microwave is 800 W. You may need to adjust timings based on the wattage of your microwave. That being said, if you prefer a more firm cookie dough, microwave in bursts of 10 additional seconds at a time.

    If you don’t eat eggs you can substitute with the same quantity (around 20g) of mashed banana, plain yoghurt or buttermilk.

    Variations

    Other toppings you could add:

    Drizzle melted chocolate over the top.

    Drizzle peanut butter over the top 

    Use White chocolate chips  instead or triple choc chips - milk, dark and white.

    Add some chopped hazlenuts.

    Add caramel pieces instead and add some caramel over the top.

    If you prefer white chocolate, add that instead and perhaps add a cranberry/raspberry sauce on top.
