As I mentioned in the last Ramadan post, fasting regularly is a means for the body to rejuvenate itself. Fasting aids the body to repel, restore and regain balance. These 30 delicious and healthy dinner (Iftar) ideas for Ramadan have been gathered with that very idea in mind. A healthy diet during Ramadan will make the rejuvenation process easier.
Ramadan is here and this year looks a little different to all the years before. We are experiencing Ramadan during a period of having to stay indoors to stop the spread of the virus. Communal iftars are not a thing this year. But Alhamdulillah, how blessed does the month feel regardless? We are getting to experience Ramadan differently but it has come with a different type of beauty. Whether that is getting to spend more time with the people in our homes who we may not usually get to see as much, or whether it means that we are getting to spend more time with ourselves and do the inner work that we may usually not have the time to do, it is still a month of joy inshAllah.
So here we go!
Healthy Samosa Recipe – All the flavour of crunchy samosas, with fewer calories! Essentially this is a vegetarian quesadilla made with a lemon, pea and potato filling. It is my favourite vegetarian samosa filling that I use time and time again, sandwiched between 2 wraps. They can also be made vegan very easily by omitting the butter.

Roast Cauliflower salad with zingy dressing – This is absolutely divine. The toasted roast cauliflower is spiced beautifully and the dressing is gorgeously zingy and amended from a Diana Henry recipe. Made with pistachios and lemon, it is a dressing I want to pour onto everything.
Chicken Akni, One Pot Chicken and Rice – Fancy making an easy version of Biryani? This one pot akni is just that! Vibrant colours, Fluffy Rice and Aromatic Flavours make Akni the dish that everyone loves. This is the ultimate comfort food that has all the flavours of Biryani minus the hard work and layering. This is a Memon Akni recipe that is very popular.
Masala Fish – A simply divine Masala Fish recipe courtesy of my Aunt. This recipe is absolutely packed with flavour. The fish is marinaded and cooked and then added to an incredibly spice infused masala sauce. A ridiculously EASY recipe made using only store cupboard ingredients.
Salmon and Vegetable Traybake with Coconut Rice – This is a terrific way to serve salmon that is just so delicious, nutritious and makes for a great mid week meal.
Quinoa and Feta Bites – This is a recipe for mini quinoa and feta bites with meat eaters in mind. This is just a flavour packed, juicy vegetarian mini burger that works well for meal prep, lunch boxes, lunch on the go or as a topping to a well dressed bowl of salad. Easy to make and ready in 15 minutes!
Rajma Masala (Kidney Bean Curry) – I am yet to come across a person who doesn’t love kidney beans curry – rajma masala. We serve it with fragrant cumin and vegetable rice.
Rajma Kebab – Kidney bean kebab is a quick and easy recipe to make and it is so so delicious. A vegan and gluten free recipe that comes from I believe Northern India.
Best Vegan Salad – The best vegan salad recipe with roast chickpeas, kale, roast sweet potatoes and a tahini and soy sauce dressing. This is my favourite vegan salad with a great variety of textures and flavours.
Oven Baked Salmon – This Oven Baked Salmon is a lovely way to serve salmon. It is very quick to make (JUST 15 minutes) and so delicious. This Salmon is vibrant, moist, flaky, citrusy and seasoned beautifully. A perfect easy weeknight meal for busy people and great for meal prep.
Chana Dal with Chicken – This is a recipe my mum makes a lot. It is a recipe that always seems to go down well with others too and is so simple to make. It is flavourful, healthy, delicious and gluten free.
Mung Daal – Delicious, Warming, Comforting, Nourishing and Nutritious Mung Daal is our go to Autumn/Winter meal. A classic Daal recipe using Mung Beans. This is a healthy Daal that is thick, creamy and flavourful.
Tandoori Chicken with Preserved Lemons – A tandoori chicken recipe with a twist. The preserved lemons add an intensity of lemon flavour that I just love. In my opinion it takes tandoori chicken to a whole new level. You can of course just skip the preserved lemons and use the juice of lemons instead.
Quick Feta Salad with Paprika Pitta Chips – This is the best greek salad recipe ever. Please trust me on this!
Chickpea Eggs – Chickpea Eggs are a favourite for breakfast, lunch or dinner at my house. In essence, they are eggs on top of delicious Chana Masala.
Roast Chicken with preserved lemons, cumin and thyme – This recipe right here is for my idea of the perfect roast chicken and is a result of some experimentation. More details in the post. You can of course skip the preserved lemon and use the juice of lemon only.
Thai Sea Bass with Mango and Pepper Salad – One of the most delicious lunch options that is amazingly healthy and quick and easy to put together.
Smoky Fish Tacos with Jalapeño Slaw and Sriracha, Chipotle Mayo – you know when you make something and it is requested ALL the time?! This is one of those meals. These tacos are loaded with Cajun flavours and are absolutely delicious.
Healthy Tuna Caesar Salad – Made with a Yoghurt dressing, this is the best tuna salad my husband has ever tasted! The salad includes Tuna, eggs, avocados, black olives and a yummy yoghurt dressing.
Healthy Egg Curry – A family favourite recipe.
Indian Chicken Salad with Avocado Green Chutney Dressing – One of my favourite salads. The best thing is that it is ready to eat in 10 minutes. I am obsessed with this dressing and have used it in several recipes including egg bagel, egg salad, quinoa salad, chickpea chaat, rice salad.
This One Pot Lemon Chicken and Thyme Orzo is made using very few ingredients, it is super quick and easy to make (30 minutes) and it is a dish that everyone will enjoy. It is also so so delicious.
One tray Herb and Citrus Chicken with Potatoes – One of our favourite meals is this delicious and easy oven baked chicken cooked with citrus flavours and herbs.
One Pot Greek Lemon Chicken and Rice – A delicious one pot meal!
Greek Chicken, Rice and Vegetable Soup is always the first soup of the spring season for us and i love it!
Healing and aromatic Veggie Coconut Curry Noodle Soup with ginger, turmeric and spinach. This soup is quick and easy to make and a real flavour explosion in a bowl.
Kawsay or khow suey is a burmese dish made with meat and spaghetti in coconut milk. There are so many variations to the dish. Like a thai curry, you can make a red version or a green version, use noodles or spaghetti, chicken or lamb and the list goes on. This is not an authentic version!
10 minute oven baked lemon and mustard fish – . Only a few ingredients and minimal effort is required for this yummy meal that is perfect as a weekday dinner.
