Corn Chaat or Corn Bhel is a healthy, zingy, spicy, sour and incredibly tasty salad. This is a popular Indian Street Food. In this recipe, Corn is roasted and topped with a mixture of sauces that are tangy and spicy.

    Corn Chaat or Corn Bhel

I love all chaats to be honest but this Corn one is probably the one I make most often. I think it is the perfect party food/dish for when friends pop in/for a gathering.

    Ingredients for Corn Chaat

Here is what you will need:

Corn – Pre Grilled to maximise flavour.

Sauces – I make a Mint and Coriander Chutney with Yoghurt and use Tamarind Paste and Date Syrup. To me, this is the perfect balance of sweet, sour, tangy and goes well with the salty flavours of the dish.

Toppings – I use some of the following – Red Chilli, Tomatoes, Green Chillies, Lemon Juice, Chaat Masala, Coriander Leaves, chopped Red Onions.

    How to make it

Brush Corn with a little oil and place under the grill.

Cook on medium-high until it turns golden and begins to char all over, turning with a pair of kitchen tongs.

Around 10 to 12 minutes. Carefully chop corn off the Cob and place on a plate.

    Add Chopped Chillies.

    Add chopped Tomato.

    Add chopped Coriander.

Add Red Chilli Powder, Chaat Masala, Lemon Juice and Salt. Then taste and adjust seasoning.

    Drizzle over Chutneys.

Optional - Sprinkle over Sev, Pomegranate, Coriander and any other toppings you like.

    Serving Suggestions

This is best served with Best Chai Tea.

Serve this as a side dish for any meal or with Grilled Meats/Veg. It is also great for  BBQ’s or a simple lunch.

It works well as a side to so many dishes.

    Variations

Add a sprinkling of Lime Juice to the Salad at the end.

Jalapeno works really well with Corn, so stir in chopped Jalapeno instead of Green Chillies if you like.

Finish with a sprinkling of Feta for a salty tang.

Sprinkle over Sev or crushed Popadums.

    Make Ahead

You can make all the seperate elements and prep the veg 2 days ahead, then assemble on the day.
