Dulce De Leche Cookies

These Dulce De Leche Cookies are soft, chewy and to die for! A chocolatey cookie with a creamy, indulgent, luxurious Dulce De Leche centre.

DULCE DE LECHE COOKIES

These cookies are so good! Chocolate cookies are a dream anyway but chocolate cookies with a creamy luxurious Dulce De Leche centre are on another level!

What is Dulce De Leche?

Dulce De Leche tastes similar to caramel but has a creamier texture and feels more luxurious and velvety. That is because it is made by heating sweetened condensed milk or milk with sugar whereas Caramel is made by boiling Water & Sugar and then Cream/Butter can be added but isn't essential. I buy Dulce De Leche from Sainsbury's.

Line 3 days with baking paper.

I like to brown butter for this recipe because it works really well with the creamy caramel Dulce De Leche. Brown butter for 3 - 4 minutes. Allow to cool for 10 minutes.

Add Butter and Sugars to the bowl of a stand mixer and beat, then add the Eggs and beat again.

Combine dry ingredients in a bowl, mix together and then add the dry ingredients to the dough.

Stir in chocolate and vanilla.

At this stage, I like to place the dough in the fridge for between 1 - 48 hours. The longer the better!

Divide dough into 14 cookies and make an indentation in the middle using your thumb. Add a little Dulce De Leche and the seal the cookie. Continue with the remaining cookies.

When ready to bake, preheat oven to 190 C/170 Fan/GM 5.

Bake in the oven for 12-15 minutes.

Sprinkle over some salt and allow to cool for 15 minutes. Then remove to a cooling rack to cool completely.

Storage

How long do they keep? These cookies keep well in an air tight container for 3 - 4 days. 

To Freeze

You can freeze the cookies minus the Dulce De Leche for 1 month. To make, allow to thaw, then add the Dulce De Leche and bake. 

You can also freeze the baked Dulce De Leche Cookies for up to 1 month in an airtight container.

Allow them to stand for a few hours so that the middle is gooey. You can also reheat them slightly in the microwave or oven if you like. 

Top Tips and Variations

  • These cookies need fridge time. Cookie dough loves fridge time as it allows the flavours to develop better.
  • Use an ice cream scoop to shape the cookie dough. It makes things easier!
  • If you prefer not to add cocoa or don't have it, add the same quantity of plain flour instead
  • You can add Chocolate Chips on top/in the Dough like the ones below.

Ingredients
  

  • 130 g Unsalted Butter
  • 100 g Dark Brown Sugar
  • 100 g Caster Sugar
  • 2 Eggs
  • 230 g Plain Flour Sieved
  • 40 g Cocoa
  • 1 tablespoon Cornflour
  • ¾ teaspoon Bicarbonate of Soda
  • ¼ teaspoon Baking Powder
  • 50 g Dark Chocolate Melted
  • 1 teaspoon Vanilla Extract
  • 200 g Dulce De Leche
  • Flaky Salt

Instructions
 

  • Line 3 trays with baking paper.
  • Brown butter by adding cubes butter to a pan over medium high heat. Allow to brown for 3 - 4 minutes. Remove from heat. Allow to cool for 10 minutes.
  • Add cooled Butter and Sugars to bowl of stand mixer or to a bowl and beat together for 5 minutes.
  • Add the Egg and beat until just combined.
  • Combine Plain Flour, Cocoa Powder, Cornflour, Bicarbonate of Soda and Baking Powder in a bowl. Mix together and then fold into the dough.
  • Stir in chocolate and vanilla.
  • At this stage, I like to place the dough in the fridge for between 1 - 48 hours. The longer the better!
