    Easy Lamb and Sausage Pie

    I have been making this Easy Lamb and Sausage Pie for years. This is a recipe that my friend's aunt used to make and it is delicious.

    The Pie has 7 ingredients if you don't include the salt, pepper and egg wash. It is fuss free and delicious. In this recipe, melt in the mouth, juicy fall apart lamb and sausages are smothered in a rich gravy, and topped with golden flaky crispy puff pastry.

    Easy Lamb and Sausage Pie

    Slow cooked chunky pieces of lamb shoulder and sausages in a rich onion gravy topped with golden puff pastry, this meat pie is fuss free and so delicious!

    I first made this pie 20 years ago and it has stayed with me. 

    Whenever I want to make easy comfort food that really hits the spot, this is what I make. My kids love it, my family love it..basically everyone loves it.

    This is brown food at it's best. The best bit about it is that first bite where you are biting through that golden buttery flaky puff pastry and into the molten rich tender filling..yum.

    How to make easy Lamb and Sausage Pie

    Meat Pie Filling – Slow cooked lamb shoulder is cooked in stock and combined with cooked sausages and rich onion gravy.   

    Puff pastry pie topping – Flaky golden puff pastry topping which I buy pre rolled is basted with an egg wash. The pie is then cooked for 30 - 40 minutes.

    I use lamb shoulder on the bone. This is browned then slow cooked in stock or water for an hour or until really tender. Then gravy and cream is added to the mix as well as loads of pepper.

    Top Tips to make Lamb and Sausage Pie

    Brown the lamb VERY well  because that adds flavour.

    Use bone on lamb shoulder and remove it from the bone later on. This makes for the most tender succulent meat.

    Variations

    Shortcrust Pastry - I have tried it with a shortcrust pastry before but it isn't as flavourful. I have also tried to do the bottom of the pie as shortcrust and the top with puff pastry but again it just isn't as delicious.

    Mushrooms - This pie works wonderfully well with mushrooms thrown in.

    Herbs - Feel free to add herbs such as rosemary or thyme.

    Step by Step 

    Cook sausages according to pack instructions, then set aside to cool.

    Brown the lamb in a little oil for 6 - 8 minutes. Boil in stock for 1 hour or until tender. Then remove from the bone and cut into small pieces.

    Add the sausages to the pot.

    Make gravy and add to the pot.

    Add a little cream and stir in.

    Add pie mixture to an oven friendly dish.

    Add pastry over the top of the dish and decorate as you like! Brush with egg wash and bake for 25 - 30 mins at 220 C/gm 7.

    Easy Lamb and Sausage Pie

    Ingredients

    • 1 - 2 tbsp Oil
    • 12 Sausages
    • 2.5 lb Lamb Shoulder On the bone, Cut into 1 inch chunks
    • 1 - 2 ltr Lamb Stock or Water
    • 1 ltr Bistro Onion Gravy
    • 3 tbsp Double Cream
    • Salt and Pepper
    • 320 g Puff Pastry Pre rolled
    • 1 Egg Whisked in a bowl

    Instructions

    1. Cook sausages in a little oil according to pack instructions, then set aside to cool. Once cool chop into biteseize pieces.

    2. Brown the lamb in a little oil for 6 - 8 minutes.

    3. Add lamb to a large pot, the pour in in stock. Bring to a boil and then simmer on low for 1 hour or until tender. Allow to cool and then remove from the bone and cut into small pieces. Save or discard the stock for future use.

    4. Add sausages to the pot with the lamb.

    5. Make gravy according to pack instructions but add 1 - 2 tbsp extra granules for a thicker gravy.

    6. Stir in cream, then pour over the meat mixture. Check seasoning and add plenty of pepper.

    7.  Add pie mixture to an oven friendly dish. 

    8. Add pastry over the top of the dish and decorate as you like. Brush with egg wash and bake at 220c/Gas mark 7 for 25 - 35 minutes or until golden brown on top.
