These Harissa Chicken Thighs are one of my favourite ways to turn a handful of pantry staples into a flavour-packed dinner. Boneless, skinless chicken thighs are marinated in harissa paste, lemon juice, olive oil and warming spices before being roasted until beautifully caramelised, tender and juicy.

The combination of smoky chilli paste, garlic, cumin and paprika creates a marinade that is bold without being overpowering. As the chicken roasts, the edges become slightly charred whilst the centre remains succulent and packed with flavour.

I most often serve these Harissa Chicken Thighs with cumin rice or Arabic rice, making them perfect for everything from easy weeknight dinners to family gatherings and entertaining.

What is Harissa?

Harissa is a North African chilli paste that originated in Tunisia and is now widely used throughout the region, particularly in Morocco, Algeria and Libya.

Traditionally made with dried red chillies, garlic, olive oil and warming spices such as cumin and coriander, harissa adds depth, smokiness and gentle heat to everything from stews and soups to grilled meats and vegetables.

Whilst every family and region has its own variation, harissa is considered one of the most important condiments in North African cooking.

In this recipe, it creates a rich, flavourful marinade that caramelises beautifully in the oven whilst keeping the chicken juicy and tender.

Why You'll Love Cooking with Harissa

Not all harissa pastes are the same. Some are thick, smoky and relatively mild, whilst others are brighter, looser and significantly spicier. This means the flavour of the finished dish can vary depending on the brand you choose.

For this recipe, I prefer a traditional Tunisian-style harissa with plenty of roasted pepper flavour and a moderate level of heat. If your harissa is particularly spicy, simply reduce the quantity slightly and add an extra splash of olive oil. I use Rose Harissa from Belazu.

Top Tip: Reserve a tablespoon of the marinade before adding the chicken and drizzle it over the cooked chicken just before serving for an extra layer of flavour.

Ingredient Notes

Boneless Skinless Chicken Thighs
Boneless skinless chicken thighs are ideal for this recipe because they absorb marinades exceptionally well and cook quickly whilst remaining juicy and tender. Compared to chicken breast, they contain slightly more fat, which helps prevent them from drying out and makes them perfect for high-heat roasting.

Harissa Paste
Harissa is the star ingredient in this recipe, providing smoky heat, richness and incredible depth of flavour. Because different brands vary in spice level, it's worth tasting yours before using it.

Lemon Juice
Lemon juice brightens the marinade and balances the richness of both the chicken and olive oil.

Olive Oil
Olive oil helps the marinade coat the chicken evenly whilst encouraging caramelisation during roasting.

Smoked Paprika
Smoked paprika enhances the smoky notes already present in the harissa and adds beautiful colour.

Ground Cumin
Cumin brings warmth and earthiness and pairs perfectly with the flavours found in traditional harissa.

Garlic Granules
Garlic adds savoury depth and complements the smoky chilli flavours beautifully.

Onion Powder
Onion powder adds subtle sweetness and rounds out the overall flavour profile.

Dried Parsley
Parsley brings a gentle herbaceous note that balances the spices.

How to Make Harissa Chicken Thighs

Step 1 - Make the Marinade
In a large bowl, combine the harissa paste, lemon juice, olive oil, salt, parsley, garlic granules, smoked paprika, cumin and onion powder. Mix until smooth and well combined.

Step 2 - Marinate the Chicken
Add the chicken thighs and toss until evenly coated. Cover and refrigerate for at least 30 minutes. For the best flavour, marinate for 4 hours or overnight.

Step 3 - Roast
Preheat the oven to 200°C. Arrange the chicken thighs in a single layer on a baking tray or roasting dish. Roast for 25 minutes, or until the chicken is cooked through and lightly caramelised around the edges. Because boneless skinless thighs cook relatively quickly, avoid overcooking them as they can dry out if left in the oven for too long. The internal temperature should reach 75°C.

Step 4 - Rest and Serve
Allow the chicken to rest for 5 minutes before serving. Spoon over any roasting juices and serve immediately.

Why Boneless Skinless Chicken Thighs Work So Well

Boneless skinless chicken thighs are one of the most forgiving cuts of chicken to cook.

They cook quickly, stay juicy and absorb marinades exceptionally well. Their slightly higher fat content means they remain tender even when roasted at high temperatures.

They're also perfect for busy weeknights because there's no carving required - simply marinate, roast and serve.

Tips for the Best Harissa Chicken

Marinate Overnight
The longer the chicken marinates, the deeper the flavour.

Don't Trim All the Fat
Boneless skinless chicken thighs often have small pieces of visible fat attached. Rather than trimming everything away, leave a little behind. As the chicken cooks, the fat renders down and helps keep the meat juicy whilst adding flavour.

Don't Overcrowd the Tray
Leaving space between each piece allows the chicken to roast rather than steam.

Use Good Quality Harissa
Since harissa is the main flavouring in this recipe, choosing a good quality paste makes a noticeable difference.

Add 1-2 tablespoons of honey to the marinade for a sweet and spicy variation.

  • 1.2 kg Boneless, skinless Chicken Thighs
  • 100 g Harissa Paste
  • 1 Lemon Juice only
  • 6 tablespoon Olive oil
  • 2 ½ teaspoon Salt
  • 2-3 teaspoon Dry Parsley
  • 3 teaspoon Garlic Granules
  • 3 teaspoon Smoked Paprika
  • 2½ teaspoon Cumin Powder
  • 3 teaspoon Onion Powder

Instructions
 

  • Step 1 - Make the Marinade - In a large bowl, combine the harissa paste, lemon juice, olive oil, salt, parsley, garlic granules, smoked paprika, cumin and onion powder. Mix until smooth and well combined.
  • Step 2 - Marinate the Chicken - Add the chicken thighs and toss until evenly coated. Cover and refrigerate for at least 30 minutes. For the best flavour, marinate for 4 hours or overnight.
  • Step 3 - Roast - Preheat the oven to 200°C. Arrange the chicken thighs in a single layer on a baking tray or roasting dish. Roast for 25 minutes, or until the chicken is cooked through and lightly caramelised around the edges. Because boneless skinless thighs cook relatively quickly, avoid overcooking them as they can dry out if left in the oven for too long. The internal temperature should reach 75°C.
  • Step 4 - Rest and Serve - Allow the chicken to rest for 5 minutes before serving. Spoon over any roasting juices and serve immediately.
