    Hot Chocolate Mug Cake

    This Hot Chocolate Mug Cake is the perfect recipe for a midnight or even mid afternoon craving. It is the easiest recipe ever and the quantity can be doubled if you want to make it a sharing dessert. The best bit? It's ready to eat in 60 seconds! Maybe 70 if you count whisking the ingredients together. Serve with a scoop of ice cream and enjoy.

    Like most people, I have been making Mug Cakes for many years but I didn't find 'the one' till now. I had had some really bad ones previously and I wanted one that really hit the spot and curbed that 12pm chocolate craving! This one does just that..

    What I love about mug cakes:

    1. There isn't much work required.
    2. They are super quick to make.
    3. They taste so good.

    Ingredients for Hot Chocolate Mug Cake

    • Cocoa Powder or your favourite Hot Chocolate Powder
    • Caster or Granulated Sugar
    • Plain Flour
    • Baking Powder
    • Egg Yolk
    • Oil
    • Milk
    • Chocolate Chips 

    How to make it?

    First whisk together Cocoa Powder or your fave Hot Chocolate Powder, Sugar, Plain Flour and Baking Powder in a mug.

    In a separate bowl whisk together the Egg Yolk, Oil, Milk.
     
    Mix the wet ingredients into the dry ingredients.

    Stir in the Chocolate Chips.
     
    Microwave for 60 seconds.

    Top Tips and FAQ's 

    • Use a microwave safe mug. The cake will rise so it needs to be large enough to allow for that.
    • Instead of the choc chips, add 1 heaped teaspoon of chocolate spread.
    • Don't be tempted to overmix the cake ingredients. You need to mix just enough to combine.
    • Don't be tempered to microwave for too long either! 45 seconds to 1 minute should be enough. My microwave is 800 W. You may need to adjust timings based on the wattage of your microwave.
    • Make sure that there is no metal on your mug.
    • If you don’t eat eggs you can substitute with the same quantity (around 20g) of mashed banana, plain yoghurt or buttermilk.
    • Egg Yolks just make for a fudgey cake and it helps to emulsify the fats and liquids.

    Can it be made ahead?

    This is best eaten straight out of the microwave.

    You can make the batter before hand and keep it in the fridge for up to 48 hours.

    Ingredients

    • 1 tbsp Cocoa Powder or your favourite Hot Chocolate Powder

    • ⅛ tsp Baking Powder
    • 1 Egg Yolk
    • 2 tbsp Oil
    • 2 tbsp Milk
    • 2 tbsp Chocolate Chips

    Instructions

    1. Combine the Cocoa, Caster Sugar, Plain Flour and Baking Powder in microwave safe mug. The cake will rise so it needs to be large enough to allow for that.

    2. Whisk together the egg, oil and milk in a bowl until combined.

    3. Add the egg mixture to the dry mixture n the mug and whisk together.

    4. Stir in the chocolate chips.

    5. Microwave mug cake for 60 seconds. Serve with a scoop of vanilla ice cream.
