Like most people, I have been making Mug Cakes for many years but I didn't find 'the one' till now. I had had some really bad ones previously and I wanted one that really hit the spot and curbed that 12pm chocolate craving! This one does just that..
What I love about mug cakes:
- There isn't much work required.
- They are super quick to make.
- They taste so good.
Ingredients for Hot Chocolate Mug Cake
- Cocoa Powder or your favourite Hot Chocolate Powder
- Caster or Granulated Sugar
- Plain Flour
- Baking Powder
- Egg Yolk
- Oil
- Milk
- Chocolate Chips
How to make it?
Top Tips and FAQ's
- Use a microwave safe mug. The cake will rise so it needs to be large enough to allow for that.
- Instead of the choc chips, add 1 heaped teaspoon of chocolate spread.
- Don't be tempted to overmix the cake ingredients. You need to mix just enough to combine.
- Don't be tempered to microwave for too long either! 45 seconds to 1 minute should be enough. My microwave is 800 W. You may need to adjust timings based on the wattage of your microwave.
- Make sure that there is no metal on your mug.
- If you don’t eat eggs you can substitute with the same quantity (around 20g) of mashed banana, plain yoghurt or buttermilk.
- Egg Yolks just make for a fudgey cake and it helps to emulsify the fats and liquids.
Can it be made ahead?
This is best eaten straight out of the microwave.
You can make the batter before hand and keep it in the fridge for up to 48 hours.

Whisk together the egg, oil and milk in a bowl until combined.

Add the egg mixture to the dry mixture n the mug and whisk together.

The girls can’t wait to try this! They love making mug cakes themselves which I of course encourage...less mess, more independence!
