Delicious Indian Masala Omelette - Masala Omelette is an indian omelette that is quick to make, delicious and something we have in our home every other day at breakfast time. Essentially it is an Omelette that is spiced with aromatic Indian Spices such as Red Chilli and Turmeric. This is a highly adaptable recipe and we often make it with adaptations such as added Veggies.
Indian Masala Omelette
I am always looking for new ways to make eggs and incorporate them into my life because i LOVE them.
But Masala Omelette or Desi omelette is something we grew up on and it is a quick breakfast recipe made in homes all over the world.
To me it is the perfect, healthy, yummy breakfast for days when you are looking for a filling breakfast to get you through any day.
My excuse for my obsession with Eggs is that they are a gnutritional powerhouse!
What is a Spicy Masala Omelette?
In essence it is the humble omelette elevated with indian spices. I much prefer it to a plain omelette.
It is also hugely versatile and you can add whatever veg you have on hand and your favourite herbs and spices.
The eggs are cooked in Oil and Ghee or Butter.

Green Chillies - I love green chilies in an omelette. You could sub this for a Chilli and Coriander Chutney.
Herbs - Fresh Coriander Leaves are great in this delicious meal.
Oil - A neutral Oil is best.
Spice Powders - Garlic, Turmeric Powder (Optional), Red Chilli Powder, Cumin if you like, Salt, Black Pepper.
Veg - (Optional) Tomatoes and Onion
How to make Masala Omelette Recipe
This is a basic version of the recipe. As I say, this recipe is highly adaptable. You can even skip the Onions and Tomato as we often do. See suggestons below:
Whisk the eggs with all the remaining ingredients.
Heat ghee or butter in a pan over medium-high heat and pour the egg mixture into the hot pan. You can add half of the egg mixture to make 2 omelettes or all of it.
Then you wait and push cooked parts into the middle with a spatula and swirl the pan to redistribute the egg mixture.
Top Tip - In my younger years, I was always so eager to flip the eggs that the underneath layer wouldn't quite be done and I would have to end up scrambling them instead. So trust me..wait a little before flipping the omelette and then transfer to a plate once it is golden brown and gobble it up with your choice of side.
Another way of making Masala Omelette
After you heat the ghee, you can then add Onion and cook till golden.
Then add garlic and tomatoes (and any other veg) and cook for a few minutes before adding the spices.
Once they are fragrant, you add in the whisked eggs and coriander and cook.
Serving Suggestions
I like to have my omelette in a chapatti rolled up with some green chutney, or with toast (under the grill) but some people swear by white bread only or a Pav.
You can also serve with Chapatti/Roti, Paratha, ghee Roti (dribble) or in a wrap.
Many people serve it with toasted bread slices and tomato ketchup but I am not a fan of ketchup!
Variations
Chaat
A sprinkling works really well here.
Loaded Veggie Omelette
Add allllll the veg and increase the number of eggs you use. Good options are Peppers, Onions, Mushrooms, Sweetcorn, Tomatoes, Broccoli, Spinach, Asparagus.
Cheese Omelette
You can add grated cheddar to the egg mixture to make a cheesy omelette or add it at the end, before sliding under the grill for a minute.
Milk
You can add Milk, Cream or Creme Fraich for super creamy Eggs.
Mushroom Cheese Omelette
Add the mushrooms and cheese in with the egg mix. So good.
Masala Omelette Quesadilla
Make a Quesadilla version!
When I was growing up, my mum always made French toast like this and it wasn't until I lived away from home at University that I learnt that French toast was actually supposed to be sweet. My friend made some and when I bit into it, I was devastated! LOL.
Sweet French Toast is nice but I would always choose this version over it. I think because when you expect it to be savoury and it isn't, it just feels strange.
Omelette Toast
Another way to serve it is to embed the bread (remove the crusts into the omelette) before flipping. Like I have here.
If you look carefully, you can see the bread creeping out of the bottom.
You can also flip the Egg into the Toast to create a sandwich. See below.
Storage and Reheating
Omelettes keep surprisingly well for up to 3 days in the fridge but I would not recommend making them ahead of time. They are best served immediately after making.
If you do have leftovers and wish to reheat, the best method is to do it on the stove top with Oil.
You can also microwave for 10 seconds at a time to avoid drying the omelette out.
Freezer Instructions
Omelettes can be frozen for up to 3 months.
To store in the freezer, wrap tightly or place into freezer bags or an airtight container.
To reheat, simply add to a pan with preheated oil and cook covered gently over a low flame.

Delicious Indian Masala Omelette
Ingredients
- 4 Eggs
- ยฝ teaspoon Garlic paste
- 2 Green Chillies finely chopped, adjust quantity to taste (or a heaped teaspoon of Green Chilli Paste)
- Small Handful Fresh Coriander finely chopped
- ยผ teaspoon Ground Turmeric
- ยฝ teaspoon Red Chilli Powder
- ยผ teaspoon Cumin Powder
- ยฝ teaspoon Salt Or to taste
- ยฝ teaspoon Black Pepper
- ยฝ small Red Onion diced, Optional
- ยฝ small Tomato diced, Optional
- 2 tablespoon Oil or Ghee
Instructions
- Whisk the eggs with all the remaining ingredients apart from the OIl/Ghee
- Heat ghee or oil in a pan over medium-high heat and pour the egg mixture into the hot pan. You can add half of the egg mixture to make 2 omelettes or all of it.
- Push cooked parts into the middle with a spatula and swirl the pan to redistribute the egg mixture.
- Once the egg has set at the bottom, flip it and continue to cook till goden brown all over.
