The BEST Masala Omelette - Masala Omelette is an indian omelette that is quick to make, delicious and something we have in our home every other day. This is a highly adaptable recipe and most days, we make it without any vegetables.
The BEST Masala Omelette
I am always looking for new ways to make eggs and incorporate them into my life because i LOVE them.
But Masala Omelette or Desi omelette is something we grew up on and it is a recipe made in homes all over the world.
To me it is the perfect, healthy, yummy breakfast for days when you are looking for a filling breakfast to get you through any day.
My excuse for my obsession with Eggs is that they are nutritious, keep me energetic and are a great source of protein, selenium, Vitamin D, B6 and B12.
What is a Masala Omelette?
In essence it is an omelette with indian spices.
I prefer it to a plain omelette.
It is also hugely versatile and you can add whatever veg you have on hand and your favourite herbs and spices.
The eggs are cooked in ghee or butter.
If you have had eggs in ghee, you will choose ghee every time. Especially if the ghee is home made because store brought ghee just doesn't have the same flavour.
Ingredients in the BEST Masala Omelette
You can adapt this recipe to suit your taste buds but here are some ideas:
Onions - White, red, spring onions
Green Chillies - I love green chillies in an omelette.
Veggies - Peppers (You can add Mushrooms, Sweetcorn, Tomatoes, broccoli, spinach, asparagus etc).
Herbs - Fresh Coriander is perfect here.
Milk - to make it soft and fluffy. It can be skipped.
Spices - Turmeric, Red Chilli, Cumin if you like, Black Pepper, Garlic. A sprinkling of Chaat is really nice here too.
How to make Masala Omelette
You whisk the eggs with all the other ingredients.
Then you heat ghee or butter in a pan and pour in the egg mixture.
Then you wait and push cooked parts into the middle with a spatula and swirl the pan to redistribute the egg mixture.
In my younger years, I was always so eager to flip the eggs that the underneath layer wouldn't quite be done and I would have to end up scrambling them instead.
So trust me..wait a little before flipping the omelette and then transfer to a plate and gobble it up with your choice of side.
Another way of making Masala Omelette
This is another way of making Masala Omelette.
After you heat the ghee, you can then add the onion and cook till golden.
Then add garlic and tomatoes (and any other veg) and cook for a few minutes before adding the spices.
Once they are fragrant, you add in the whisked eggs (with milk if using) and coriander and cook.
Serving Suggestions
I like to have my omelette in a chapatti rolled up, or with toast (under the grill) but some people swear by white bread only or a Pav.
You can also serve with roti, paratha, ghee roti (dribble) or in a wrap.
Variations
Chaat -A sprinkling works really well here.
Garlic - Add 1 clove crushed or sliced or Garlic granules.
Loaded Veggie Omelette - Add allllll the veg and increase the number of eggs you use.
Cheese Omelette – You can add grated cheddar to the egg mixture to make a cheesy omelette or add it at the end, before sliding under the grill for a minute.
Mushroom Cheese Omelette - Add the mushrooms and cheese in with the egg mix. So good.

Masala Omelette French Toast - When I was growing up, my mum always made French toast like this and it wasn't until I lived away from home at University that I learnt that French toast was actually supposed to be sweet.
My friend made some and when I bit into it, I was devastated! LOL.
Sweet French Toast is nice but I would always choose this version over it.
I think because when you expect it to be savoury and it isn't, it just feels strange.
Another way to serve it is to embed the bread (remove the crusts into the omelette) before flipping. Like I have here.
If you look carefully, you can see the bread creeping out of the bottom.
You can also flip the Egg into the Toast to create a sandwich. See below.
Storage and Reheating
Omelettes keep surprisingly well for up to 3 days in the fridge but I would not recommend making them ahead of time. They are best served immediately after making.
If you do have leftovers and wish to reheat, the best method is to do it on the stove top with a tsp of Oil.
You can also microwave for 10 seconds at a time to avoid drying the omelette out.

Masala Omelette
Masala Omelette is an indian omelette that some of us have in our homes every day. It makes a lovely delicious breakfast and is quick and easy to make.
Ingredients
- 4 Eggs
- 1/2 Onion finely diced, you can sub with red onion or 2 finely sliced spring onions
- 2 Green Chillies finely chopped, adjust quantity to taste
- Small Handful Fresh Coriander finely chopped
- 1/4 tsp Ground Turmeric
- 1/2 tsp Red Chilli Powder
- 1/2 tsp Salt Or to taste
- 1/2 tsp Black Pepper Optional
- 2 tbsp Milk Optional
- 2 tbsp Ghee
Instructions

In a bowl, beat the eggs, then add all the other ingredients minus the ghee.

In a wide, nonstick frying pan, heat the ghee or butter over a medium heat.

Add half the egg mixture to the pan and leave to set, before flipping to cook the other side.

Transfer the omelette from the pan on to a plate and keep warm. Repeat for the second omelette. You can also make one large omelette instead.
