I have always been partial to soft and chewy Oat Cookies/Oat Biscuits. Especially ones studded with chocolate chips. They are easily adaptable and oh so delicious.

Oat Cookies

I think Oat Cookies/Oat Biscuits are massively underrated. I absolutely love an oat cookie. Hobnobs are the best! The other great thing about these oat cookies is that they are made with simple ingredients like oats, butter & brown/granulated sugar and are easily adaptable.

You can add whatever you like to them such as Raisins, Cranberries, Nuts, Autumnal spices, you can also swap the Golden Syrup for Honey if you like.

How to Make Oat Cookies/Oat Biscuits

Whisk the Oats & Flour together in a bowl.

Melt Butter in a pan with Sugar and Golden Syrup.

Remove from heat and stir in Vanilla.

Pour over the Oats & Flour and bring together to form a dough.

Allow to cool a little.

Fold in the chocolate chips.

Form into 14 cookies.

Bake in a preheated oven at 180 C/Gas Mark 4 for 15 - 20 minutes.

What oats should I use?

Oat Biscuits are always best made with old fashioned or rolled oats which add the best texture and chew.

Storage

These Oat Biscuits/Oat Cookies keep well for up to a week in an airtight container.

They also freeze well. Freeze baked and cooled cookies for up to 3 months. Wrap them well and place in a ziplock bag or airtight container.
