Crispy Air Fryer Jacket Potatoes with a fluffy interior, and golden on the outside. They’re easy to make and absolutely delicious too. Whether you call them Jackets, Roast Potatoes or Baked Potatoes, these Potatoes are a recipe that everyone loves.

what you will need for this air fryer baked potato recipe
To make perfect Air Fryer baked potatoes, you only need basic ingredients:
- Potatoes - For best results, the potatoes we use for roasting are Maris Pipers or King Edwards in the UK. Yukon Gold or Russet Potatoes in the US. We use medium potatoes.
- Oil – Extra virgin olive oil or any flavourless Oil with a high smoke point such as Canola Oil or Avocado OIl. We coat the Potatoes in a little Oil. This helps the Salt to adhere to the Potatoes and also helps to make the skin crispy.
- Salt – Any Salt works from fine Table Salt to Coarse Sea Salt. This is important for crispy results.
how to make air fryer roasted potatoes
This is a very easy recipe. For the full recipe, scroll to the printable recipe card at the bottom of the page:
Wash Potatoes, give them a good scrub and pat them dry with paper towels.
Coat with Oil and rub over Salt.
Place in the Microwave for 10 minutes and then into the Air Fryer at 200 C/400 degrees F for 40 - 50 minutes (don’t forget to flip midway) or until crispy on the outside and tender on the inside.
NOTE - Cooking temperatures will vary depending on the size of the Potato!
Add your favourite toppings.

I like to keep my potatoes pretty simple. There are an abundance of fillings that go well with baked potatoes. Try:
- With a pat of butter, salt and black pepper
- Sour Cream and Chives or Spring Onions
- Chilli Con Carne
- Cheese and Beans
- Tuna Mayo
- Chicken Curry
You can really get creative here and add any toppings you love. You could even make a bunch of toppings and have a selection ready for you and your loved ones to mix and match their favourite ones.

Poke holes all over the Potatoes
Use a fork to poke all over for fluffy insides.
Cook Times will vary
Cook times are dependent on the type of size of Potato.
Don’t overcrowd the Air Fryer Basket
Make sure there is enough space between Potatoes as the skin needs space to crisp up. 4 is usually sufficient but it does depend on the size of your Air Fryer.
Don't wrap in Aluminum Foil
This steams rather then crisps the Potato Skins.

Jacket Potatoes are best eaten fresh.
However if you happen to change your mind after they are cooked, allow them to cool and place in the fridge in an airtight container within 1 - 2 hours. They will keep for up to 2 days.

You can also make Sweet Potatoes using the same method but they usually require less time to cook so keep an eye on them.

Air Fryer Jacket Potatoes
Ingredients
- 2 Potatoes Maris Piper os similar, see notes
- 2 tablespoon Extra Virgin Olive Oil
- Coarse Sea Salt
Instructions
- Pat the Potatoes dry.
- Place in the Microwave for 10 minutes (for 800 W).
- Prick all over with a fork.
- Rub all over with Oil and then add Salt.
- Place Potatoes in the Air Fryer basket and cook in the Air Fryer at 200 C/400 F for about 45 to 50 minutes turning midway, until tender.
- Use a sharp knife to cut done the centre, then add your favourite toppings.

This seems an excellent way cook potatoes and I'll be trying this the next time I bake some spuds. I'd suggest a nicer texture results from fluffing the potato with a fork before buttering. Even better, put away the knife,
and pierce the top repeatedly with a fork and then use a gentle squeeze from the ends to pop it open.
