    Banoffee Cookie Dough

    How to make a delicious Banoffee Cookie Dough - A Hot Cookie Dough with Caramel, Bananas and a crushed buttery Digestive crumb. Serve with a scoop or 3 of ice cream for a truly indulgent and delicious dessert.

    I wanted to combine one of our popular recipes -  Pizza Hut Cookie Dough Recipe with one of my favourite dessert recipes and it turned out so good!

    This Banoffee cookie dough is sweet with caramel and bananas, rich, creamy and gooey with  chocolate on the inside and crispy and golden on the outside.  

    It is a dessert that will be devoured in minutes.

    You have 2 options here:

    Serve it while it is still warm and dig in with a dollop of ice cream or eat it cold after it has set a little. I prefer it hot. YUM.

    Is this a Cookie Dough or Pizookie?

    I love a Pizookie but I prefer a Cookie Dough.
     
    A pizookie is essentially a combination of a cookie and pizza — basically it is a giant chocolate chip cookie.
     
    A cookie dough is not sliceable because it is so soft whereas a pizzokie, whilst still soft in the middle can be sliced. To make a Pizookie version, bake for a little longer.

    Here are the basic ingredients:

    Unsalted Butter – I use this because it helps with the sweet/salty balance because you can always add some flaky salt on top or a little salt to the batter after tasting it if it isn’t salty enough but you can’t take any away from pre salted butter. 

    Caster Sugar – For gorgeously crisp edges.

    Brown sugar – Any time you want a bit of chew, add some brown sugar.

    1 Egg and 1 Egg Yolk – I like to use Clarence Court Eggs because the yolks are so vibrant and silky.

    Plain Flour – I prefer to use Plain Flour in most my baking recipes so that i can control the amount of raising agent that I put in.

    Vanilla Paste – Lifts the flavour of any cookie. An extract will also work.

    Baking Powder – To add a little lift.

    Salt – Just a pinch to bring everything together.

    Chocolate Chips – I use chopped chocolate instead of chips but you can add chocolate chips, caramels, M & Ms and any chocolatey treat that you love. 

    Caramel and Bananas - Golden caramel and bananas make this cookie dough irresistible!

    Digestives & Butter - Make a crumb and add it into the cookie dough. Save some for the top too.

    Here is how you make it:

    Cream together until the mixture is light and creamy. You can do this in a standing mixer or in a large bowl with a hand-held mixer for 1 – 2 minutes.

    add egg & vanilla

    Add egg yolk and egg and mix until homogenous. Stir in Vanilla.

    add dry ingredients

    Fold in the dry ingredients on top of the wet ingredients. Stir them together gently then beat until everything is combined and there are no lumps.

    Add chocolate chips and stir by hand until the chocolate chips are evenly distributed throughout the  cookie batter.

    Next, spread half the batter into the prepared tin.

    Add some Caramel and Digestive crumb.

    Add more batter on top.

    bake!

    Next, bake for 20 – 25 minutes, or until the sides are just browning/set and the middle is still slightly jiggly. It will continue to bake after it is removed from the oven.

    Serve!

    Let the cookie cool for 5-10 minutes before you serve it! Add some banana and a dollop of ice cream to the centre and serve.

    Use a thick store brought caramel or tinned caramel.

    You can make this in the same sized cast iron pan.

    The short baking time keeps the middle gooey, if you prefer it more set increase the baking time.

    Add chopped nuts/chopped chocolates/caramels/chopped treats of your choice.

    Banoffee Cookie Dough

    Ingredients

    • 200 g Unsalted Butter
    • 200 g Light Brown Sugar
    • 40 g Caster Sugar
    • 1 Egg
    • 1 Egg Yolk
    • 1 tsp Vanilla Paste
    • 300 g Plain Flour
    • 1 tsp Baking Powder
    • Pinch Salt
    • 200 g Chocolate Chips Milk
    • 200 g Caramel
    • 150 g Digestives
    • 50 g Butter Melted
    • 1 Banana sliced finely

    Instructions

    1. Preheat oven to 200 °C/Gas Mark 6. Grease and line a 20 cm round tin with baking paper.

    2. Cream together butter and sugars for 1 - 2 minute until light and creamy.

    3. Add the egg and beat over medium speed until evenly combined. Stir in the Vanilla.

    4. Fold in the Plain Flour, Baking Powder, Salt. 

    5. Add chocolate Chips and stir just to combine.

    6. Spread half the batter into the prepared tin. Add Caramel.

    7. Crush Digestives with a rolling pin in a bag or in a food processor. Melt Butter and add to crushed Digestives. Mix together to form a crumb. Add to the cookie dough on top of the Caramel.

    8. Add the remaining cookie dough and spread evenly over the top.

    9. Bake for 15 - 20 minutes, or until the sides are just browning/set and the middle is still slightly jiggly. It will continue to bake after it is removed from the oven.

    10. Let the cookie cool for 5-10 minutes before you serve it! Add sliced bananas and a dollop of ice cream to the centre and serve.
