Lazy Cat Cake by Kuwaiti Chef Ahmad Al Zamel - Every Ramadan, a new dessert begins to go viral and last Ramadan it was this one. Social media was full of people pouring, layering and whisking parts of the famous lazy cat cake. In order to be true to it’s name, I try to do as little work as possible here. I mean, isn’t there enough to do the day before Eid/on Eid? Essentially this Ahmed Cake recipe is made up of delicious layers of creamy and chocolatey things - Chocolate Cake, Chocolate Milk, a whipped Cream Cheese layer, a silky Ganache (in my quest for ease I use melted Chocolate spread) and a crunchy Cereal topping. It is a rich, indulgent dessert full of complimentary textures that requires very little hands on time and effort to prepare making it the ultimate no fuss dessert. Ideal for Eid, Christmas, Get togethers and more.

What is Lazy Cat Cake?

By now, I am sure you will have come across the viral recipe by Kuwaiti chef Ahmad al Zamel Lazy Cat Cake.

This recipe went viral for a reason. Think - lazy prep, rich flavour, and irresistible textures (soft, creamy, chocolaty, and crunchy all in one bite!) If you love quick, no fuss but impressive desserts, you need to try this one.

This is a dessert that can be handed over to the kids to take care of..depending on their ages of course. My son made it last Eid and to no ones surprise, it was the first dessert to disappear from the overladen dessert table.

It’s sometimes called Krunchoco Cake because of the irresistible crunchy chocolate topping.
This is such a versatile dessert too. Read on to learn more about how you can mix things up and make this recipe your own!

What are in the Layers of Lazy Cat Cake?

Lazy Cat Cake is a layered dessert that’s as indulgent as it is effortless. Here’s what makes it special:

Base: Moist chocolate cake (store-bought or homemade).
Soak: Drizzled with chocolate milk for extra softness.
Cream Layer: Whipped cream cheese, mascarpone, or condensed milk whipped with thickened or double cream.
Ganache: A glossy velvety pour of chocolate and cream or Chocolate spread.
Crunchy Topping: Cereal like Cocoa Pops or rice puffs coated in chocolate and cocoa powder.

Lazy Cat Cake Ingredients

Chocolate Cake - Store brought moist Chocolate cake. I brought the Delicious Double Chocolate Jumbo Loaf Cake from Aldi which is roughly the equivalent of 2 small supermarket chocolate loaf cakes. Or make this fudgy chocolate cake instead.

Chocolate Milk - I use store brought Chocolate Milk. You can make your own by heating Cocoa Powder and Milk in a pot till just simmering and whisking it through. Optionally you can also stir in some Vanilla.

Cream Cheese Layer - 650g mix Cream Cheese or Mascarpone and thickened (extra thick double cream) or Double Cream. Plus ½ tin condensed milk. I always prefer to opt for thickened cream because you will be whisking it to thicken it anyway. The store brought version takes away a lot of the 'thickening' time.

Gananche - Or in my case, I use melted Chocolate spread. You can of course make a Ganache made up of Double/Heavy Cream and Chocolate but Chocolate Spread melted in the microwave in short bursts also works just as well.

Crunchy Top - Cocoa Pops or Cocoa Crunch/Choco Balls for a more textured version. This is topped with Chocolate Spread or Ganache before being dusted with Cocoa Powder.

Step by Step Instructions

As mentioned, this is a super simple dessert recipe. The whole point of this cake is that it is supposed to be no fuss and easy to make..You could of course make all the individual elements but I don’t think that is necessary here. Here is how you make the super simple version:

Cake Layer - Slice Cake and layer in the bottom of a dish. (I used a 25 cm/9 inch by 19cm/7.5 inch rectangular pyrex dish).

Chocolate Milk Soak — poke holes all over the Cake slices and drizzle Chocolate Milk for some extra moisture.

Cream Cheese layer—beat Cream Cheese, Extra Thick Double Cream and Condensed Milk to soft peaks. Then spread over the top and chill. Not you..the ‘cake’/dessert.

Add Chocolate layer—melt Chocolate Spread or make a ganache. Pour over the top. Place in the fridge to set for a couple of hours.

Add Cereal crunch—coat Cereal in melted Chocolate and Cocoa Powder and sprinkle over the top just before serving so it remains crispy and doesn’t become soggy. This isn’t a huge problem with the larger cereal shapes but if you are using cocoa pops, do not add it till just before serving.

Tips & Variations

Keep it crunchy – Add topping right before serving so it doesn’t soften in the fridge.
Flavour twist – Add an espresso shot to the soak for mocha vibes and to enhance the flavour of the cocoa in the milk.
Biscoff or Dubai Chocolate version – Swap ganache with Biscoff for a different flavour or why not make a Dubai Chocolate version like we did with my much loved Dubai Chooclate Brownies with crispy Kataifi on top or somewhere in the middle.
Nutty top – Scatter over roast Nuts to make a Snickers version or some Pretzels.
No Cream Cheese – Use Mascarpone instead.
Chocolate Cake - I have made this Cake with store brought Muffins, Chocolate Loaf Cake and Chocolate Cake. All of them work great.

Yes! Prepare the cake and cream layers in advance. Add ganache and topping before serving.

Ingredients
  

Cake Layer

  • 600 g Chocolate Cake Store Brought, I use Aldi Double Chocolate Jumbo Loaf Cake

Chocolate Milk Soak

  • 125 - 200 ml Chocolate Milk

Cream Cheese layer

  • 250 g Cream Cheese
  • 400 g Extra Thick Double Cream As long as the Cream and Cream Cheese total 650g, you can adjust the quantities to suit your preference e.g. use 325g of each instead
  • 200 g Condensed Milk

Chocolate layer

  • 200 - 250g Chocolate Spread Melted in microwave

Cereal crunch

  • 1 ½ cup Chocolate Cereal Like Cocoa Crunch or Cocoa Pops or similar
  • 3 - 4 tbsp Chocolate Spread Melted in microwave
  • 1 - 2 tablespoon Cocoa Powder

Instructions
 

Cake Layer

  • Slice Cake and layer in the bottom of a dish. (I used a 25 cm/9 inch by 19cm/7.5 inch rectangular pyrex dish).

Chocolate Milk Soak

  • Poke holes all over the cake slices and drizzle over Chocolate Milk for extra moisture.

Cream Cheese layer

  • Beat cream cheese, thickened cream and condensed milk to soft peaks; spread over the top and chill.

Add Chocolate layer

  • Melt chocolate spread or make a ganache by mixing 200g melted Chocolate or very finely chopped Chocolate in to 200g of warmed Double Cream. Pour over the top. Place in the fridge to set for a couple of hours.

Add Cereal crunch

  • Coat cereal in melted chocolate and cocoa powder and sprinkle over the top just before serving so it remains crispy and doesn’t become soggy. This isn’t a huge problem with the larger cereal shapes but if you are using cocoa pops, do not add it till just before serving.
