Menemen with Feta - Turkish Scrambled Eggs
This is a delicious scrambled egg recipe that is delicately spiced and full of vegetables. It is eaten at Breakfast but can make a nice lunch too!
There are many variations of Menemen – including some with onions ( I used Spring Onions for a quicker version), cheese and spinach too. I add Feta because it makes everything better. 😛
It is best served with nice crusty bread and some garlic yoghurt by the side.
Menemen was one of the first recipes on the blog and I have updated it slightly today because the original picture was terrible!

Top tips for making Menemen
Use the best eggs you can find!
I love Burford Browns. Good eggs make the world of difference and these are not only gorgeously vibrant but they are velvety, silky and so delicious.
Use Butter (or Ghee) to cook the eggs in
This makes the eggs gorgeously fluffy and also stops them sticking to the pan. A little oil helps too but butter makes the eggs nice and soft.
Use a non stick pan
Just makes life so much easier.
Medium low heat
Keep the heat medium low for gorgeously creamy, melty scrambled eggs.
Silicon Spatula
A silicon spatula is great for scrambled eggs/menemen because it works with you to easily bend its way around the pan and shape the eggs in the way you desire.

With Garlicky Yoghurt - A lot of Turkish food has a garlicky yoghurt accompaniment that works with all the gorgeous flavours in any of their delicious food!
To make simply combine 1/2 cup yoghurt, a little olive oil, 1/2 tsp salt, 1 clove crushed Garlic, Black pepper and lemon juice in a bowl and whisk to combine.

How to make delicious and soft Menemen
Add oil to a frying pan and then butter and heat gently before adding chopped peppers.
Now add spring onions and chilli flakes and saute for 3 - 4 minutes before pouring in pureed tomatoes.
Add a squeeze of tomato puree and aleppo chilli flakes, cumin, sweet paprika. Season.
Whisk eggs in a bowl and add feta.
Add the egg mixture. Allow to cook on medium low for a few minutes stirring with a spatula continuously until eggs are scrambled and cooked through but not dry.
Variation
So you know how I said there are several ways to make these Eggs, here is another popular version.
Cook 2 Red Onions (diced) in Oil for 7 - 10 minutes until golden brown.
Add 1 Red Romano Pepper (sliced) and 1 Sivri Pepper (sliced). Cook for 4 - 5 minutes.
Add Salt, A good pinch of Aleppo Pepper and Pepper.
Add 3 chopped Tomatoes and cook covered on medium low for 10 minutes.
Add 4 Eggs into the sauce and season. Let them set for a minute before scrambling. Allow to cook for a few minutes and then remove from the pan.
Menemen Storage
Menemen is best eaten fresh.
FRIDGE
It can be stored in the fridge for 3 days in a covered plate.
To reheat, simply reheat in a pan over low heat for 1-2 minutes.
Or place in the microwave and heat in 10 second bursts.

Menemen with Feta - Turkish Scrambled Eggs - An Easy recipe for Turkish Menemen
Ingredients
- 2 tbsp Oil
- 2 tbsp Butter
- 2 Red (Bell) Peppers Diced
- 3 Spring Onions chopped finely
- 1 tsp Red Chilli Flakes
- 1 large Tomato Pureed or 1/2 tin Plum tomatoes pureed
- 1 tsp Sweet Paprika
- 1 tsp Aleppo Chilli Flakes Optional
- 1 tsp Ground Cumin
- Salt and Pepper to taste
- 4 large Eggs
- 100 g Feta Crumbled
Instructions

Now add spring onions and chilli flakes and saute for 3 - 4 minutes before pouring in pureed tomatoes.

Add a squeeze of tomato puree and aleppo chilli flakes, cumin, sweet paprika, oregano and thyme. Season. Turn heat to low and cover pan. Cook on low for 10 - 15 minutes.

Recipe Notes
Onions - If you prefer to use Onions, use 1 onion diced and saute on medium low for 5 - 6 minutes after the oil is hot, Then add the peppers and continue as normal.
Feta - You can skip the Feta if you like.
