How to make the BEST Scrambled Eggs with Cheese
Ever since I discovered the creamiest dreamiest scrambled eggs, I can no longer tolerate dry over scrambled eggs..and today I want to share how I make my perfect scrambled eggs with cheese.
So here's the thing..when I make scrambled eggs with cheese, I like my eggs to be soft, shiny but not too wet and definitely not dry. When I have regular scrambled eggs, I like them to be super soft and custardy.
What you need for Scrambled Eggs with Cheese
Here what you need to make these delicious eggs:
- Eggs – 2 per person is standard in my home. I LOVE Clarence Court Burford Brown Eggs because of their Silky vibrant yolks.
- Butter – For the best flavour ever. Oil and Marge don't compare.
- Creme Fraiche – This makes the eggs extra creamy and stops them from over cooking. I started to add this to Eggs after seeing the viral Gordon Ramsay scrambled egg recipe.
- Salt and pepper
- Cheese - Just a sprinkling of Cheddar works beautifully well.
- Chives - I love chives and eggs. They add a mild onion and garlic flavour.
How to make Scrambled Eggs with Cheese
The perfect scrambled eggs with cheese is all about technique:
Add Eggs to a pot with Butter over medium/low heat.
Start to fold the eggs from the edges and push them across the pot using a rubber spatula.
Continue for 2 - 3 minutes on low.
Remove from the stove, season, stir in Creme Fraiche.
Add a sprinkling of cheese and chives.
Scrambled Eggs with Cheese - Top Tips
- Heat – Keep the heat at medium low to cook the eggs gently, keep them creamy and make sure they don't dry out.
- Use a smaller pot or small frying pan - This is so you don't have to push the eggs around too much.
- Use a Non stick pot or pan for ease.
- Use a Rubber spatula - A flexible spatula makes it easier to fold soft folds and move the eggs around gently.
- Be gentle - Gently push and fold the eggs rather then whisk vigorously.
- Use salted Butter - Butter and eggs = YUM. It also stops the eggs from sticking to the pan.
- Use the best Eggs you can - I love Clarence Court/St Ewe or Farm Eggs.
Variations
If you don't have Creme Fraiche, stir in the same quantity of Double Cream or add Milk into the pot with Eggs.

Ingredients
- 2 Eggs
- 1 tbsp Butter
- Salt and Pepper
- ½ tsp Creme Fraiche
- 2 tbsp Cheddar grated
- 1 tsp Chives chopped
Instructions

Add Eggs to a pot with Butter over medium/low heat.
