How to make the BEST Scrambled Eggs with Cheese
Ever since I discovered the creamiest dreamiest scrambled eggs, I can no longer tolerate dry over scrambled eggs..and today I want to share how I make my perfect cheesy soft scrambled eggs that are keto friendly, low carb and gluten free.
So here's the thing..when I make scrambled eggs with cheese, I like my eggs to be soft, shiny but not too wet and definitely not dry.
What you need for the best cheesy Scrambled Eggs
Here what you need to make these delicious eggs:
Fresh Eggs
Any free range large Eggs are great here.
2 per person is standard in my home. I LOVE Clarence Court Burford Brown Eggs because of their Silky and vibrant yolks.
Butter
For the best flavour ever!
Butter adds LOADS of flavour and make the Eggs rich and creamy. Oil and Marge don't compare.
Creme Fraiche
This is the secret ingredient that makes the eggs extra creamy and stops them from over cooking.
I started to add this to Eggs after seeing the viral Gordon Ramsay scrambled egg recipe.
You can substitute with Double/Heavy Cream or Cream Cheese.
Salt and Black Pepper
I prefer to use cracked whole Pepper tather then Black Pepper Powder.
Cheese
Just a sprinkling of Cheddar Cheese works beautifully well. Mild or Mature it’s up to you!
Add the Cheese whilst the Eggs are hot so the Cheese melts on top of the Eggs.
Fresh Chives
I love chives and eggs. They add a mild onion and garlic flavour to these delicious Eggs.
How to make cheesy Cheesy Eggs recipe
The perfect scrambled eggs with shredded cheese is all about technique. This is the best method:
Add Eggs to a pot with Butter over medium heat.
Start to fold the eggs from the center of the pan and around the edges of the pan. Push them across the pot using a rubber spatula.
Continue to move slowly around the pan for 2 - 3 minutes on medium-low heat.
You are aiming for a soft scramble so remove them from the heat at this stage. The Eggs will continue to cook in the residual heat.
Remove from the stove, season, stir in Creme Fraiche.
Add a sprinkling of cheese whilst the eggs are still hot, then sprinkle over the chives.
Transfer cooked eggs to a plate and serve with Toast.
Scrambled fluffy Eggs with Cheese - Simple Tips
Be gentle
Gently push and fold the eggs over medium low heat, rather then whisk vigorously.
This will give you the best texture and will create soft curds.
Cook over medium low heat
Keep the heat at medium low to cook the eggs gently, keep them creamy and make sure they don't dry out.
Use a smaller pot or small frying pan
This is so you don't have to push the eggs around too much. Use a Non stick pot/nonstick skillet or pan for ease.
Use a Rubber spatula
A flexible spatula makes it easier to fold soft folds and move the eggs around gently.
Use salted Butter
Butter and eggs = YUM. It also stops the eggs from sticking to the pan.
Use the best Eggs you can - I love Clarence Court/St Ewe or Farm Eggs.
How to serve
Serve hot with Toast, in a Wrap or Chapatti.
Serve with a hot cup of Tea or Chai.
Variations
Creme Fraiche
If you don't have Creme Fraiche, stir in the same quantity of Double Cream or add Milk into the pot with the Eggs.
Use a different Cheese
Red Leicester is a great choice. Monterey Jack is great too. I would not recommend anything too strong like Parmesan Cheese.
Some people like to add American Cheese on top and then stir it through but I haven't tried this myeself.
The amount of Cheese you use, is entirely up to you!
Add some heat
Try Red Chilli Flakes, Cayenne Pepper or add a little Sriracha sauce on top.
Storage and Reheating
Scrambled Eggs are best eaten fresh. However if you do have any leftovers, store in the fridge in a airtight container for up to 24 hours.
Reheat in the microwave for 1 - 2 minutes till the Eggs are warmed all the way through.

Can scrambled eggs be made ahead of time?
In my personal opinion - no. They taste much better fresh and are quick and easy to whip up.
