Cumin & Coriander

Garlic, Smoked Paprika and Cayenne Pepper
Garlic adds warmth and richness, Smoked paprika adds gentle smokiness and helps the potatoes develop colour while roasting. Cayenne Pepper adds gentle heat.

All Spice
Just a small amount adds warmth and depth that works beautifully with roasted sweet potato.

Olive Oil
Helps the potatoes roast evenly while encouraging caramelisation around the edges.

How to make them

Roast the Sweet Potatoes
Preheat oven to 190°C fan/210°C conventional/425°F.
Prick the the sweet potatoes all over with a fork. Rub with olive oil and season with Cumin, Coriander, Smoked paprika, All Spice, Garlic, Cayenne, Salt and pepper. Place cut side down up a tray lined with baking paper.
Roast for about 75 - 80 minutes (turn them midway) until soft, caramelised, and golden around the edges. If the Potatoes are smaller, reduce the time to 60 minutes.

Prepare Your Toppings

While the potatoes roast, prepare any toppings you want to use. Good combinations include:

  • Zhoug, Garlic Yoghurt, Mince
  • Crispy chickpeas + herbs + tahini
  • Feta + pomegranate + mint
  • Pickled onions + chilli oil + parsley

Top the roasted sweet potatoes with your chosen toppings and finish with extra herbs, lemon, or chilli oil if desired.

Ingredients
  

  • 4 Large Sweet Potatoes
  • 4 tablespoon Olive Oil
  • 2 teaspoon Ground Cumin
  • 1 ½ teaspoon Cayenne Pepper adjust according to your taste
  • 2 teaspoon Ground Coriander

  • 2 teaspoon Smoked Paprika
