Five Minute Magic Green Avocado Chutney/Avocado Dressing - Being indian, the obsession with this chutney began at a very young age.. I mean it brings any dish to life right? Then I added an avocado to it and it became a flavour explosion that is also really bright, smooth, luscious and creamy. Hello chutney that I add to everything. This is the BEST Avocado dressing EVER!

This recipe is ready in minutes. It is made with very few ingredients and is perfect for using up that Avocado in th bottom of the fridge.

AVOCADO DRESSING

This Avocado dressing is to die for.

It is creamy and spicy and delicious.

It is like literally my favourite sauce and during Ramadan, I kinda went a little crazy and poured it on EVERYTHING we ate.

Basically it was all over salads, marinades, dips and spreads.

Since I have been making it, I have come across so many variations including one in the book Together (the book with the Duchess of  Cambridge about The Hubb Community Kitchen who cook for the community affected by the Grenfell tragedy). Apparently it's her favourite. 

Other variations have included this one from Nigella.

I have also seen some with green peppers, pistachios, pine nuts, lime juice etc etc.

So basically what I am saying is feel free to switch it up and amend it as you please!

I add it to egg salads, nachos, chips..omg, quesadillas, tuna salads, soups..basically I am obsessed. 

I think I have gotten carried away with this drizzle and try to add it to everything.

It goes really well with Biryani too. I just up the chillies.

I tend to keep this Avocado dressing in the fridge and use within a couple of days..or I keep the base sauce in the fridge and blend in the avocado on the day of using it.

INGREDIENTS IN AVOCADO DRESSING

Avocado - A Ripe and creamy avocado works best.

Garlic - Crushed or whole Garlic. You can also finely slice it.

Ginger - Peeled and chopped.

Green Chillies - Adjust the quantity according to your taste. You can use Jalapenos instead.

Lemon Juice - Lime juice also works.

Yoghurt - Plain, Natural or Greek work well

HOW TO USE AVOCADO DRESSING

This recipe can be used on everything!

My favorite way to use this avocado dressing is on a big salad. It will brighten up any salad.

It is great with Eggs surprisingly too. 

It is lovely served with Roast Veg.

It works well with Grains such as Rice and Quinoa.

It also works well with Chickpeas or Chaats.

STORAGE

This Avocado dressing keeps well in an airtight or tightly wrapped jar in the fridge for 3 days.

Ingredients
  

  • ½ large bunch Coriander leaves and stems
  • 7 Mint leaves or ½ teaspoon mint sauce
  • 4 - 5 Green Chillies or 1 tablespoon sliced Jalapeños
  • 200 ml Plain Yoghurt Optional (if skipping, add extra avocado)
  • 3 Garlic Cloves
  • ½ inch peeled Ginger Optional
  • 1 Avocado ripe
  • 2 tablespoon Lemon or Lime Juice
  • Salt to taste

Instructions
 

  • Add all the ingredients for to a blender and blend till smooth and creamy. You mcay need to add a little water.
