I love eggs in all their forms but I am particular fond of scrambled eggs because they are so quick and fuss free to make.
I also like them to have a slight kick.
The recipe is made with every day ingredients and is quick and easy to whip up during the week or on weekends.
Follow my tips to make the best scrambled eggs with chilli!
What are Scrambled eggs?
Scrambled Eggs are a dish made with eggs that are stirred, folded and beaten together whilst gently heated. Usually Butter, Salt and Pepper are added too.
The eggs are cracked into a bowl with seasoning and the mixture is whisked or they can be cracked directly into a hot pan.
The eggs are stirred as they cook creating soft curds.
Once the liquid has mostly set, additional ingredients can be added such as herbs, spices, meat or cheese can be folded in over low heat until incorporated.
The eggs are usually slightly undercooked when removed from heat, as the eggs will continue to cook.
Scrambled Eggs with Chilli Recipe Ingredients
To make this scrambled eggs recipe, youโll need 6 basic ingredients:
Eggs
Large, fresh, free range Eggs. Fresh Eggs are creamier, fluffier andand more flavourful.
Milk, sour cream, creme fraiche
To enhance the creaminess and to make for the most tender texture.
Butter or Oil
For the pan. Either of these means the Eggs wonโt stick to the pan. Butter also adds flavour.
Salt and Pepper
To add flavour to these simple scrambled eggs.
Chilli
You can use Chilli Powder, Chilli Flakes or chopped Green Chillies.
Chives
These add a mild onion flavour.
How to Make Chilli Scrambled Eggs
Hereโs how to make these easy scrambled eggs:
Crack Eggs into a medium bowl and whisk until the Eggs and whites are combined.
Preheat the pan and add Butter.
Once it begins to melt add the Egg mixture and let it cook for a few seconds.
Add chilli flakes and chopped green chillies if using.
Use a rubber spatula to fold the Eggs from the sides of the pan and along the bottom to form large, soft curds of scrambled eggs.
Continue cooking and stirring the eggs every few seconds.
Stop cooking when the eggs are mostly set, but a little liquid egg remains.
Add milk, creme fraiche or sour cream to stop the eggs from cooking and stir in.
Season to taste with salt and pepper and top with chives.
Tips for making Chilli Scrambled Eggs
Use a nonstick pan and a silicone spatula
This makes life easier. A silicone spatula helps to scramble and fold the eggs with ease.
Cook over Low Heat
Cooking Eggs at too high a heat results in bland, dry, rubbery eggs.
Remove from heat asap
Once the eggs are almost set, remove them from the heat.
They continue to cook after they are off the heat and will look slightly runny in places.

Are scrambled Eggs healthy?
Eggs are high in protein and are great as part of a balanced diet. They contain B vitamins, vitamin D and healthy unsaturated fats. Butter and Creme Fraiche do add calories and fat but these can be skipped if you prefer.
Can scrambled Eggs be reheated?
Yes you can reheat them in the microwave in 20 - 30 second bursts, stirring in between to heat evenly.

Spices - such as Cumin, Garlic granules, Turmeric Powder can be whisked into the eggs.
Veg - such as chopped Onions, Spinach or Tomatoes can be added to the Eggs to create a frittata.
Cheesy - add soft or grated cheese towards the end of the cooling time.
