    Quick & Easy Doritos Nachos

    These quick and easy Doritos Nachos are ideal for movie night. They make a great sharing snack for games night/a crowd. They are easily adaptable and packed full of layers of flavour.

    Quick & Easy Doritos Nachos

    These delicious cheesy Nachos make the perfect treat for movie night.

    Serve with your favourite toppings – see my suggestions below.

    Why I love them

    So easy to make – Use your favourite leftovers to top them -  Rotisserie Chicken. Chilli.

    Adaptable – There really is no end to variations here. Add your favourite flavours and enjoy! Here are a Chicken and Veg Version.

    Quick to make - Ready to eat in 15 minutes.

    Can be Air Fried - See this recipe.

    Ingredients

    Doritos – I love the Chilli ones, Cheese ones or the Lime ones. But you can use any Doritos flavour.

    Ground Lamb – or Beef.

    Taco Seasoning - You can always make your own seasoning and add spices of your choice.

    I sometimes add extra garlic, smoked paprika and cayenne.

    Cheddar Cheese – Grated. I prefer to buy the block. The coating on the grated cheese means it doesn’t melt as nicely.

    I also like Red Leicester and prefer Mature Cheddar. Feta is also great.

    Toppings

    So many options here, try:

    Sour Cream

    Avocado, diced.

    Guacamole

    Lettuce, shredded

    Sour Cream

    Salsa

    Pickled Onions

    Pickled Jalapeños

    Spring Onions, sliced

    Tomatillo Salsa (Check the International aisle)

    Peppers, diced

    Black Beans

    Refried Beans

    Corn

    Coriander

    Ranch Sauce

    How to make them

    Preheat oven to 190 c/Gas Mark 5.

    Add Oil to a pan and then add the meat.

    Scatter over the Taco Seasoning.

    Cook till done.

    Add Doritos to a oven tray.

    Add Meat.

    Add Cheese and toppings.

    Cook for 2 - 3 minutes.

    Add more toppings and serve.

    Variations

    Try with your favourite variety of Doritos.

    Make with leftover rotisserie chicken or a diced chicken.

    Make a veggie version with black beans (recipe coming soon).

    Use your favourite Cheese - Feta, Red Leicester.

    Add your favourite Spices - Smoked Paprika, Garlic, Cayenne, Cumin are good options.

    Toppings - Use your favourite toppings. Some of mine are listed above.

    Tips for Quick & Easy Doritos Nachos

    It is best to grate the Cheese yourself. Pre grated cheese has a coating which stops it from clumping together, this however also affects the way it melts.

    It is better to have multiple layers then to try and have lots of toppings per layer.

    Line the tray with greaseproof paper or foil.

    Don’t be tempted to over bake otherwise the Doritos will darken at the edges and taste bitter.

    Make Ahead

    You can cook the meat ahead and use it when needed. Just reheat slightly first. The meat can be made up to 2 days ahead. Store in an airtight container.

    Storage

    It is best to eat Doritos Nachos as soon as they are made but they can be served up to 30 minutes after making them.

    Ingredients

    • 180 g Doritos
    • 1 tbsp Oil
    • 225 g Lamb Mince
    • 1 tbsp Taco Seasoning or your favourite seasoning
    • 110 g Cheddar Cheese Shredded
    • Toppings of choice - Sour Cream, Gauacamole, Salsa (see other suggestions below)

    Instructions

    1. Preheat oven to 190 c/Gas Mark 5.

    2. Add Oil to a pan and then add the meat. Scatter over the Taco Seasoning. Cook till meat is cooked.

    3. Add Doritos to a oven tray. Top with meat.

    4. Add Cheese and any toppings you like. Cook for 2 - 3 minutes.

    5. Add more toppings and serve.
