Vegan Creamy Cashew Fig Bars – Refined Sugar Free/GF
Vegan creamy cashew fig bars- refined sugar free/gf! I just wanted to say that again. Gluten free too? For real? My disbelief is mainly down to the fact that they taste so good. They definitely taste creamy enough for one to assume that there has to be some dairy floating around in them..but nope. There isn’t. I first came across these bars on Pinterest and just had to try making them. Pinterest – Basically a massive Catalogue of food. Yes I know it has loads of other stuff on it too but I like to think that its most popular category is probably food and maybe crafts.
Chocolate Quinoa Cookies
About these chocolate quinoa cookies.. can we just take a moment to appreciate Quinoa in all of its superfood/super grain glory? I mean, talk about versatile. Reasons I love these cookies include the fact that they tick 2 HUGE boxes – they taste awesome and they are healthy-ish. Hello chocolate quinoa cookies!
This recipe is as easy as it gets and therefore ideal (with assistance) to make with kids. A holiday activity if you will. You can add anything to it really, including your kids favourite treats. What i’m saying is, you can’t really go wrong. I opted for grown up toppings when I made this, because we were at my mum’s and she was giving my kids WHATEVER they wanted anyway.
Chai Poached Pears with Honey Yoghurt
These chai poached pears with honey yoghurt are so good. A healthy dessert is always a good idea and these fit the bill perfectly.
Crustless Gluten Free Pumpkin Pie
This crustless gluten free pumpkin pie is delicious. Why gluten free you may ask? Well, I have been asked by my doc in alternative therapy to cut back on my gluten and dairy intake so I have adjusted my diet accordingly. I am not completely gluten free, so I can have pumpkin pie with a crust too but I try to avoid gluten where i can and I want the blog to reflect that.
Gluten free and Vegan Apple Crumble with Salted Caramel
This gluten free and vegan apple crumble with salted caramel is delicious. The topping is made up of walnuts, gluten free oats and almonds. The vegan caramel sauce is creamy and dreamily yummy.
Fudgy Avocado Brownies
These fudgy avocado brownies are one of the most requested recipes in my household. By my son mostly. My daughter will eat anything so I could put anything in front of her and she will be fine. They are fudgy like normal brownies, chocolatey rich and soooo good. I’ll tell you a secret. I was never into brownies. I hated them. Until i started making them at home and realised that really these things are pretty adaptable! I love trying different variations. Needless to say, I love them a lot more now. 🙂 Here is another avocado brownie recipe that I love. It is not healthy. It is from a different time. It is definitely a cheat day recipe! I apologise for the photos here, this recipe was supposed to go up a long time ago and we weren’t great at the whole picture taking thing.
Spelt, white chocolate and cranberry cookies
These spelt, white chocolate and cranberry cookies are a bit of a revelation to me. I wasn’t expecting to like them. I was literally just making the recipe up as I went along and praying it would work! They turned out so great, that even my kids LOVED them.
Dark Chocolate and Stem Ginger Anzac Biscuits
These dark chocolate and stem ginger anzac biscuits are the stuff dreams are made of. The never ending debate around whether or not anzacs should be soft or hard, is kinda boring. Like.. just make a decision guys and adjust your recipe accordingly. 😉 I make them both ways, depending on my mood. The ones pictured here are the softer variety, made with caster sugar and baked for a shorter time.
I prefer the darker ones overall and therefore the recipe below, is for the darker ones.
Triple Chocolate Cookie in a skillet/cast iron pan
I really did not know what to call this! Is it a deep pan cookie? A skillet cookie? A Cast iron pan cookie or is it cookie dough. I settled for this title because it covers all the bases. A triple chocolate cookie in a skillet/cast iron pan is so delicious and is a real crowd pleaser. It looks good too! When you get into the middle, you are basically in chocolate lava land. Drop some ice cream in and all is good. 🙂
This is something everyone should make. It is perfect for that day off from healthy eating that some of us eagerly anticipate all week. I would strongly suggest that you only make this in a cast iron pan although. You can try it in a cake tin and cook for slightly longer if you want to. It will yield similar results but it won’t be the same.
I will be putting up a recipe for a copycat Pizza Hut style cookie dough soon so keep your eyes peeled for that.
